There was a time when granola was a non-negotiable part of my daily routine, a beloved snack that brought pure joy. My passion for yogurt runs deep, and the combination of crunchy granola and fresh berries always felt like the quintessential topping. Before embarking on the Autoimmune Protocol (AIP) journey, my workdays invariably included a delightful serving of Greek yogurt, decadent chocolate granola, and plump blueberries. It was, without a doubt, my favorite office snack – a simple pleasure I looked forward to every day. However, life and dietary changes have a way of shifting our culinary landscape. When I transitioned away from grains, nuts, and most seeds, the concept of granola suddenly seemed like a distant memory. What could possibly be left to create that familiar, satisfying crunch?
The thought of crafting a grain-free granola that could rival my old favorite felt like a monumental task. I questioned whether it would even be palatable, let alone something others would enjoy. Yet, after much experimentation, I finally perfected this Grain-Free Blueberry Coconut Granola recipe. The moment I tasted it, I was instantly smitten – it was a flavor revelation that reignited my love affair with granola all over again!
This remarkable grain-free granola isn’t just a delicious treat; it’s a versatile staple. It proudly featured in my 2017 Back To School Recipe Series, which included a complimentary meal plan download. Whether you’re looking for a wholesome breakfast component or an energizing snack to tuck into your backpack, this recipe delivers. It’s incredibly easy to prepare, bursting with flavor, and perfectly suited for those seeking healthier, allergy-friendly alternatives. Embracing a grain-free lifestyle doesn’t mean sacrificing flavor or texture, and this granola is a testament to that.

The Journey to Grain-Free Goodness: Why This Granola Works
For many, adopting a Paleo or Autoimmune Protocol (AIP) diet involves a significant shift in eating habits, often eliminating grains, legumes, and certain nuts and seeds to support gut health and reduce inflammation. While these dietary changes can bring immense benefits, they can also leave you longing for familiar comforts, especially convenient snacks like granola. Traditional granola, laden with oats, nuts, and refined sugars, is off-limits. This is where the magic of this Grain-Free Blueberry Coconut Granola comes in. It’s not just a substitute; it’s a superior option that caters to dietary needs without compromising on the delightful texture and taste you expect from a great granola. Crafted with carefully selected ingredients, this recipe offers a nutrient-dense, satisfying, and incredibly flavorful alternative that fits seamlessly into a clean eating lifestyle, whether you’re following Paleo, AIP, or simply aiming to reduce your grain intake.
Essential Ingredients for Your Grain-Free Granola Masterpiece
Creating this delicious, wholesome granola relies on a handful of key ingredients that deliver on both flavor and dietary compliance. Each component plays a vital role in achieving the perfect texture and taste, while adhering to grain-free, Paleo, and even AIP guidelines with simple modifications.
Crispy Coconut Chips and Enriching Coconut Oil
Coconut forms the very heart of this granola, serving as the primary base and providing much of its delightful crunch and tropical flavor. Both coconut chips and coconut oil are absolutely essential for making this a truly grain-free and seed-free granola, suitable even for the strictest AIP protocols when almonds are omitted. The coconut oil does more than just bind the ingredients; it infuses the entire batch with healthy fats, contributing to a deeply satisfying texture and a rich, aromatic flavor profile. For the coconut chips, you can choose your favorite brand, but I’ve had great success with this particular brand. Ensure you use unsweetened, large coconut flakes or chips for the best results, as they become wonderfully crisp when baked.
Sweet and Crunchy Baked Apple Chips
To enhance the granola’s textural complexity and add a touch of natural sweetness, baked apple chips are a fantastic addition. They provide an extra layer of crunch that complements the coconut beautifully, creating a more dynamic eating experience. These aren’t just for texture; they bring a subtle fruitiness that elevates the overall flavor. While I personally enjoy Bare chips for their consistent quality and simple ingredients, any brand of plain, unsweetened baked apple chips will work wonderfully. Just make sure they don’t have any added sugars or oils if you’re aiming for the healthiest version.
Bursting with Flavor: Dried Blueberries
Dried blueberries are, without a doubt, my absolute favorite ingredient in this granola. Their concentrated sweetness and chewy texture provide bursts of flavor that are simply irresistible. While dried fruits are naturally high in sugar, this recipe uses a relatively small amount compared to the generous yield of the entire batch. A little goes a long way in delivering that perfect balance of sweetness. If you’re particularly mindful of sugar intake, feel free to scale back the quantity slightly. Just ensure you use unsweetened dried blueberries if possible, or opt for those with minimal added sugars to keep it as healthy as possible. They provide a delightful tart counterpoint to the sweetness of the coconut.
Optional Crunch: Almonds (or AIP-Friendly Alternatives)
For those who tolerate nuts and are following a Paleo diet (but not strict AIP), raw chopped almonds add an additional layer of texture and a pleasant nutty crunch to the granola. They introduce a different dimension of flavor and richness. However, if you are strictly nut-free or adhering to the AIP protocol, it’s incredibly easy to leave them out. Simply substitute them with more coconut chips or, for an even more interesting texture, use sliced tigernuts. Tigernuts are a root vegetable, not a nut, and are a fantastic AIP-compliant alternative that mimics the satisfying chewiness and mild flavor of nuts. This flexibility ensures everyone can enjoy this delicious granola.
Subtle Sweetness: Maple Syrup
Unlike many granola recipes that call for copious amounts of sweeteners, this recipe uses a modest 1 tablespoon of maple syrup for the entire batch. This minimal amount is *much less* than most store-bought or homemade granolas, making it a great option for those trying to reduce their sugar intake. The maple syrup serves a dual purpose: it helps bind the ingredients together, ensuring those lovely clusters, and contributes a subtle, natural sweetness that enhances the overall flavor without being overpowering. If you’re looking to further reduce sugar, you can experiment by adding a bit more coconut oil instead, which will help with binding and add healthy fats.
Aromatic Spices: Cinnamon and Sea Salt
No granola is complete without the warm embrace of spices. Cinnamon brings a comforting, aromatic depth that perfectly complements the fruit and coconut. It’s a classic pairing that adds complexity to the sweetness. A touch of sea salt is crucial for balancing the flavors, preventing the granola from tasting flat and highlighting the natural sweetness of the other ingredients. These simple additions elevate the granola from good to truly exceptional.

Grain Free Blueberry Coconut Granola (Paleo & AIP)
Author: Michelle

Ingredients
- 1 ½ cup coconut chips
- ½ cup chopped raw almonds, (sub more coconut or sliced tigernuts for AIP)
- ⅓ cup baked apple chips
- ⅓ cup dried blueberries
- 2 tbsp coconut oil, melted
- 1 tbsp honey (or maple syrup for vegan/AIP compliance)
- 2 tsp cinnamon
- ½ tsp sea salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper. This prevents sticking and makes cleanup a breeze.
- In a large mixing bowl, combine all of the dry ingredients: coconut chips, chopped almonds (or your chosen substitute), baked apple chips, dried blueberries, cinnamon, and sea salt. Stir thoroughly to ensure everything is evenly distributed.
- Pour the melted coconut oil and honey (or maple syrup) over the dry mixture. Stir well with a spatula or your hands until all the dry ingredients are uniformly coated. Make sure there are no dry spots left behind, as this helps with clustering and even baking.
- Spread the coated granola mixture thinly and evenly onto the prepared baking sheet. For extra clusters, you can press it down slightly.
- Bake for 8-10 minutes. Keep a close eye on it, as granola can burn quickly due to the high sugar content in the dried fruit and syrup. It should turn a light golden brown and smell fragrant.
- Once baked, remove the baking sheet from the oven and allow the granola to cool completely on the sheet. As it cools, it will crisp up and form those desirable clusters. Resist the urge to touch it too much while it’s warm, as it will be soft.
- Store your cooled grain-free granola in an airtight container in the refrigerator for up to one week to maintain its freshness and crunch.
- Serve this delightful granola over coconut yogurt, as a topping for smoothie bowls, or simply enjoy it as a satisfying and healthy snack all by itself.
