Keep in mind that my homemade version typically has a milder garlic flavor compared to the store-bought Daylight sauce, so I recommend adding an extra 1-2 cloves of minced garlic directly to the chili recipe when sautéing the onions to ensure a comparable depth of flavor.

During this time, the flavors will meld beautifully, and the vegetables will become very tender. The chili will naturally reduce and thicken. Once it reaches your desired consistency, remove it from the heat. Stir in the fresh lime juice to taste, adding a bright, acidic finish. Ingredients

  • ¾ tsp salt
  • ¼ tsp black pepper
  • 1 tsp oregano
  • 2 tsp dried cilantro
  • 1 lb ground beef, I recommend 90/10
  • 2 tbsp avocado oil
  • ½ white onion, diced
  • 1 ½ cup butternut squash, peeled cubed
  • 1 ½ cup sweet potato, peeled and cubed
  • 4 cups beef broth
  • 1 cup Daylight Veggie Pasta Sauce, see notes for swaps
  • ½ cup canned black beans, drained and rinsed
  • ½ cup pinto beans, drained and rinsed
  • Juice of one lime

For topping

  • Sliced avocado
  • 1 tbsp cilantro, chopped
  • Lime wedges

Instructions

  1. Combine the salt, black pepper, oregano, and dried cilantro in a small bowl and set aside.
  2. Using a large, deep cast iron pot or Dutch oven set over medium heat, add the ground beef. Season with half of the prepared spice blend. Crumble and brown the ground beef until it’s fully cooked and no pink remains. Remove the browned beef from the pot and set it aside, leaving any rendered fat in the pot.
  3. Add the 2 tablespoons of avocado oil to the pot. Once shimmering, add the diced white onion and sauté for 4-5 minutes, or until it becomes lightly translucent and fragrant. Next, add the cubed butternut squash and sweet potato. Season these vegetables with the remainder of the spice blend. Continue to sauté for another 5-7 minutes, stirring occasionally, until the veggies are lightly fork-tender.
  4. Return the cooked ground beef to the pot. Pour in the 4 cups of beef broth and 1 cup of Daylight Veggie Pasta Sauce. Add the ½ cup of drained and rinsed black beans and ½ cup of drained and rinsed pinto beans. Stir all ingredients thoroughly to combine them.
  5. Bring the chili mixture to a boil, then reduce the heat to a gentle simmer. Cover the pot with a lid, leaving it slightly ajar to allow some steam to escape. Simmer for about 15-20 minutes, stirring often to ensure even cooking and prevent sticking. After this, remove the lid completely and continue to simmer for another 15-20 minutes, or until the chili has reduced to your desired thickness and the vegetables are very tender.
  6. Remove the pot from the heat. Stir in the juice of one lime, adjusting to taste for a bright, fresh finish. Serve the chili hot, topped generously with sliced fresh avocado and chopped cilantro.

Sauce Substitution: If you are swapping the Daylight Veggie Pasta sauce for a homemade nightshade-free sauce, please add 2 extra minced garlic cloves to the chili recipe when sautéing the onions, as homemade sauces often have a milder garlic flavor.

AIP Modification: If you are following the Autoimmune Protocol (AIP), please omit the black pepper from the spice blend. Additionally, swap out the black beans and pinto beans for an additional 1/3 lb of ground beef or an equal volume of AIP-friendly vegetables like diced cauliflower or sweet potato, to maintain the chili’s heartiness.
