  • Using the same pan (or a new pan if needed), add the ground pork sausage (if using plain pork for AIP, mix in optional AIP sausage seasoning here). Cook until browned, using a wooden spoon to crumble the meat. Drain any excess fat. Set aside with the sweet potatoes.
  • Add the sliced mushrooms to the same pan and lightly salt with ¼ tsp sea salt. Cook for 4-5 minutes or until softened and released their moisture. Set aside with the other fillings.
  • Lightly heat the burrito tortillas as instructed on the package (usually a few seconds in a dry skillet or microwave) to make them pliable and easier to fold without tearing.
  • Lay out a warmed tortilla. Add about 1/4th of the sweet potato, about 1/4-1/3 cup of sausage, 8-10 sliced mushrooms, and 1 strip’s worth of chopped bacon to the center of each tortilla, being careful not to overfill (see notes section for tips on filling). To roll the burrito, fold up the bottom edge about a third of the way, then fold in the two corners from the sides, and finally, roll the burrito tightly from the bottom up.
