Ingredients

  • 1 cup tigernut flour
  • ¼ cup tapioca starch
  • 2 tbsp Vital Proteins collagen, or one scoop
  • 1 tbsp Vital Proteins gelatin, see notes on substitutions inquiries
  • ¼ tsp baking soda
  • 1 tsp cinnamon
  • ¼ cup maple syrup
  • 2 tbsp coconut oil
  • 3 tbsp pumpkin puree
  • ¼ cup dairy free chocolate chips, sub carob chip recipe here for AIP

Instructions

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine all of the dry ingredients (tigernut flour, tapioca starch, collagen, gelatin, baking soda, and cinnamon). Stir them together thoroughly to ensure they are well combined. Remember to reserve the chocolate chips for a later step.
  • Add the maple syrup, melted coconut oil, and pumpkin puree to the dry ingredients. Mix everything together well until all components are fully incorporated and form a smooth, consistent cookie dough. Once the dough is smooth, gently fold in the dairy-free chocolate chips (or carob chips if using).
  • Take the cookie dough and form it into 8-9 evenly sized cookies. Place them on the prepared baking sheet, ensuring there is enough space between each cookie for even baking.
  • Bake in the preheated oven for 10 minutes. Once baked, carefully remove the cookies from the oven and transfer them to a cooling rack to cool completely.
