  • Remove from heat and let the mixture cool slightly to a warm temperature. Transfer the mixture to the bowl of a stand mixer fitted with a whisk attachment (or use a hand mixer). Whisk on high speed for 30 seconds. Add the vanilla extract and protein powder. Continue whisking on high for 2-3 minutes, or until stiff peaks form and the marshmallow mixture is thick, fluffy, and holds its shape. Note: This may take longer with a hand mixer depending on its power.
  • Immediately pour the whipped marshmallow mixture over the cooled graham cracker crust in the baking dish. Gently spread it evenly with a spatula, working quickly as it sets fast. Transfer the dish to the fridge and chill for at least an hour, or until the marshmallow layer is firm and springy to the touch.

For the Ganache

  • In a heatproof bowl, combine the dairy-free chocolate chips and coconut cream. Melt in the microwave in 20-second intervals, stirring thoroughly after each interval until completely smooth and melted. Alternatively, melt over a double boiler.
  • Allow the ganache to cool slightly until it’s warm but not steaming hot (this prevents the marshmallow layer from melting). Pour the cooled ganache over the set marshmallow layer. Use a rubber spatula to gently spread the chocolate evenly over the entire surface.
  • Return the baking dish to the fridge and chill for 1-2 hours, or until the ganache is completely hardened and firm to the touch.
  • Once the ganache is set, remove the bars from the fridge. Carefully lift them out of the pan using the parchment paper overhang and transfer to a cutting board. Using a sharp, warm knife, cut into 9 large slices or 18 smaller squares. Serve chilled for the best texture and flavor!
