For the pesto
- 1 cup arugula
- 1 cup fresh basil
- ½ cup olive oil
- ¼ cup fresh lemon juice
- 2 cloves of garlic, peeled and minced
- 2 tsp onion powder
- ¼ tsp sea salt
For the skillet
- 3 tbsp avocado oil, divided (buy on Amazon)
- 1 lb ground turkey
- 1 tsp sea salt, divided
- ¼ tsp black pepper, omit for AIP
- 2 medium sweet potato, diced
- 1 clove garlic, minced
- 1 bunch asparagus, trimmed and chopped
Instructions
- To make the pesto, combine all of the ingredients in a high speed blender. Blend until fully combined. Set aside in the fridge to chill.
