- 1 bunch asparagus
- 1 tbsp SimplyNature 100% Pure Avocado Oil

- ¼ tsp Stonemill Black Pepper (omit for AIP)

FOR THE CAULIFLOWER RICE
- 1 large head cauliflower

Instructions
- Preheat the oven to 375 F (190 C) and line two baking sheets with parchment paper.
- For the asparagus: Wash thoroughly and snap off the tough white ends. Place the asparagus onto one prepared baking sheet and drizzle with avocado oil, fresh lemon juice, sea salt, and black pepper (remember to omit pepper if following AIP). Roast for 15-20 minutes, or until the asparagus is tender-crisp to your preference.
- For the salmon: Place the defrosted salmon fillets onto the second baking sheet. Drizzle with avocado oil, fresh lemon juice, sea salt, and black pepper (again, omit pepper for AIP compliance).
- Roast the salmon in the preheated oven for 15 minutes, or until it easily flakes with a fork, indicating it’s perfectly cooked through.
- For the cauliflower rice: Wash the cauliflower well and chop it into manageable florets.
- Add the cauliflower florets to a food processor. Pulse or set to “shred” until the cauliflower is finely riced, resembling grains of rice. Stop and stir as needed to ensure even processing.
- Using a large skillet, heat the remaining avocado oil over medium heat.
- Add the riced cauliflower to the skillet, season with salt, and sauté for 8-10 minutes, stirring occasionally, until it is lightly crisped and tender.
