Ingredients

For the cookies

  • ¾ cup tigernut flour
  • ¼ cup arrowroot starch
  • 2 tbsp cocoa powder, sub carob powder for AIP
  • 1 tbsp gelatin
  • ⅛ tsp baking soda
  • ¼ cup coconut oil
  • ¼ cup maple syrup
  • ¼ tsp peppermint extract, sub 1 drop of food grade peppermint oil for AIP

For the coating

  • ½ cup dairy free chocolate chips, sub homemade carob chips for AIP
  • 2 tbsp coconut oil
  • ¼ tsp peppermint extract, sub 1-2 drops of food grade peppermint oil for AIP

Instructions

For the cookies

  1. Preheat the oven to 375 F (190 C) and line a baking sheet with parchment paper lightly greased with coconut oil.
  2. Combine all dry ingredients in a large mixing bowl and whisk thoroughly until well mixed.
  3. Add the wet ingredients to the dry mixture and mix very well until everything is fully incorporated and a cohesive dough forms. Ensure there are no dry pockets of flour.
  4. Take a small handful of dough at a time and slightly flatten it onto the prepared parchment paper. Use a 2.5″-3″ round cookie cutter to cut out the cookies. Carefully use your fingers to pull away any excess dough from the sides. Gather and re-roll the scraps to cut more cookies until all the dough is used.
  5. Bake in the preheated oven for 11-12 minutes, or until the edges are lightly firm. Very carefully transfer the parchment paper with the cookies to a wire cooling rack. These cookies are delicate when warm and need ample time to set. Allow them to cool completely and firm up before proceeding to the coating step.

For the chocolate coating

  1. To create a double boiler, bring a pot of water to a low boil. Place a heat-safe metal bowl over the top of the pot, ensuring the bottom of the bowl does not touch the water. Add the dairy-free chocolate chips (or carob chips) and coconut oil to the bowl. Stir continuously until the mixture is fully melted and smooth, and all ingredients are well incorporated. Carefully remove the bowl from the heat and set it aside. Stir in the peppermint extract or food-grade peppermint oil.
  2. Once the cookies are completely cool and firm, use a fork to dip one cookie at a time into the melted chocolate coating. Ensure the cookie is evenly coated, then gently tap the fork against the side of the bowl to allow any excess chocolate to drip off. Place the coated cookies back onto the cooling rack or a fresh piece of parchment paper. Transfer them to the fridge to harden for about 30 minutes, or to the freezer for approximately 15 minutes.
  3. Optional: After the first coating of chocolate has completely hardened, you can use any remaining melted chocolate to drizzle decorative patterns over the tops of the cookies for an extra touch. Chill the cookies again briefly to allow the drizzle to harden before serving and enjoying.
