It yields perfectly tender strands that are easy to work with. If you don’t have an Instant Pot, baking it in the oven is another excellent method. The most crucial step, regardless of your cooking choice, is to ensure the spaghetti squash is thoroughly drained and squeezed of any excess liquid. This prevents soggy nuggets and ensures that irresistible crispiness.

Coconut Flour & Arrowroot Starch: The Binding Duo

These two flours are essential for binding the spaghetti squash mixture together, preventing the nuggets from falling apart during cooking.   • 2 tbsp arrowroot starch
  • 2 tbsp coconut oil

  • 1 tsp sea salt

For the gelatin egg (sub 1 regular egg if tolerated and not AIP)

  • 1 tbsp gelatin
  • ¼ cup water

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. This crucial step prevents sticking and ensures even baking.
  2. Using a food processor or a sharp knife, roughly chop the cooked spaghetti squash. The goal is to shorten the strands without mashing the squash into a purée. You want some texture for the nuggets. After chopping, use a cheesecloth or several layers of paper towel to firmly squeeze out any excess liquid. This step is vital for crispy nuggets, so don’t skip it!
  3. In a large mixing bowl, combine the drained spaghetti squash with the coconut flour, melted coconut oil, arrowroot starch, chopped green onion, dried basil, and sea salt. Mix thoroughly until all ingredients are well combined and the mixture forms a cohesive dough-like consistency.
  4. To prepare the gelatin egg (if using): Pour the ¼ cup of cold water into a small pot and evenly sprinkle the gelatin over the surface.   5. Once the mixture is ready, form it into small, uniform nugget shapes (approximately 1-inch pieces). Place these nuggets onto the prepared baking sheet, ensuring they are spaced slightly apart for even cooking. Bake in the preheated oven for 20-25 minutes, flipping them halfway through the cooking time to ensure all sides get golden and crispy.
