Few dishes evoke the charm of a weekend brunch quite like a quiche. Traditionally, this baked egg custard, encased in a buttery, flaky pastry crust, has been a staple. It offers endless possibilities for fillings, from savory meats to garden-fresh vegetables. However, for those navigating a gluten-free lifestyle, enjoying a traditional quiche has often meant settling for alternatives like sheet pan eggs or a simple 3-ingredient chia pudding. But what if you didn’t have to miss out on the rich, savory goodness of quiche? What if you could enjoy a crust that was not only gluten-free but also added nutritional value and an incredible flavor profile?

This innovative sweet potato crust quiche eliminates grains, gluten, and traditional pastry entirely. The star of our crust is wholesome sweet potato, which provides a naturally sweet counterpoint to the savory filling, brimming with fresh vegetables and rich eggs.

Mastering Sweet Potato Shredding for the Perfect Crust

The foundation of our remarkable quiche crust lies in perfectly shredded sweet potatoes. Achieving the right consistency is key to a crust that holds together beautifully and bakes evenly. Here are my top tips for shredding sweet potatoes efficiently and safely:

  • A Food Processor with a Shredder Attachment: Without a doubt, this is the quickest and most effortless method. A food processor can shred an entire sweet potato in mere seconds, ensuring uniform pieces which are essential for a cohesive crust. Look for a machine with a sturdy shredder disk for best results. Remember to peel the sweet potato first for a smoother texture in your crust.
  • A Box Grater: If you don’t have a food processor, a traditional box grater works perfectly well. While it requires more elbow grease and takes a bit longer, the results are equally effective. For safety, always use the largest holes on your grater and consider wearing a cut-resistant glove to protect your hands, especially as you get to the smaller pieces of sweet potato. The goal is fine, uniform shreds that will bind together easily.

Regardless of the method you choose, remember to squeeze out as much excess moisture as possible from the shredded sweet potato before mixing it with other ingredients. This crucial step prevents a soggy crust and ensures it crisps up nicely in the oven.

Essential Recipe Ingredients

Crafting this delightful sweet potato crust quiche requires a thoughtful selection of fresh, high-quality ingredients. Each component plays a crucial role in delivering the unique flavor and texture of this dish. You’ll find complete information on ingredients and quantities in the detailed recipe section below.

All the ingredients for sweet potato quiche.
Gather your fresh ingredients for a truly satisfying sweet potato quiche.
  • Sweet Potato: This root vegetable is the undisputed star of our innovative grain-free crust. When shredded and properly prepared, it forms a tender yet sturdy base that beautifully complements the rich egg filling. Sweet potatoes also lend a subtle sweetness and an impressive nutritional boost, including a significant amount of Vitamin A.
  • Egg: Eggs are the very essence of any quiche, providing the custardy texture and binding the savory filling together. They are also an excellent source of high-quality protein, making this quiche incredibly satisfying.
  • Ghee (Clarified Butter): Ghee adds a wonderfully rich, nutty flavor to the sautéed vegetables and imparts a lovely golden hue. As clarified butter, it’s often tolerated better by those sensitive to dairy. However, if ghee isn’t available or you prefer a completely dairy-free option, high-quality avocado oil makes an excellent substitute, offering a neutral flavor and healthy fats.
  • Goat Cheese: While optional, a touch of soft goat cheese elevates the flavor profile with its tangy, creamy notes. It melts beautifully into the egg mixture, adding a gourmet touch. For those avoiding dairy or seeking alternatives, consider the substitution options discussed below.
  • Arrowroot Starch: This is a key binder for the sweet potato crust, helping it hold its shape and achieve the perfect texture without relying on grains.
  • Avocado Oil: Used in the crust mixture and as a cooking oil, avocado oil is a fantastic choice for its high smoke point and healthy monounsaturated fats.
  • Fresh Vegetables (Leeks, Asparagus, Shallots, Garlic): This combination offers a balanced array of savory and aromatic flavors. Leeks provide a mild oniony taste, asparagus adds a fresh, slightly earthy note, while shallots and garlic build a foundational aromatic base for the quiche filling.
  • Salt & Pepper: Essential for seasoning both the crust and the filling, bringing out all the delicious flavors.
  • Green Onion: A fresh garnish that adds a mild oniony bite and a pop of color upon serving.

Customization: Modifications & Substitutions

One of the joys of cooking is the ability to adapt recipes to suit your taste, dietary needs, or what you have on hand. This sweet potato crust quiche is wonderfully flexible, allowing for numerous modifications and substitutions:

  • Veggies: The vegetable filling in this recipe is incredibly versatile. Don’t feel limited to leeks and asparagus! Experiment with other seasonal vegetables that you love. Great additions include:
    • Spinach or Kale: Wilt down a handful of fresh spinach or finely chopped kale for added greens.
    • Zucchini or Yellow Squash: Grate or finely dice for a delicate flavor and texture.
    • Sun-Dried Tomatoes: For a burst of intense, sweet-tart flavor.
    • Bell Peppers: Red, yellow, or orange bell peppers add sweetness and vibrant color.
    • Mushrooms: Sautéed cremini or shiitake mushrooms add an earthy, umami depth.
    • Broccoli or Cauliflower Florets: Lightly steamed and chopped for extra crunch and nutrients.

Remember to sauté harder vegetables until tender before adding them to the egg mixture.

  • Cheese: The goat cheese adds a lovely tang, but it is entirely optional.
    • Dairy-Free Option: Simply omit the goat cheese for a completely dairy-free quiche. The rich flavor of the eggs and vegetables will still shine through.
    • Other Cheeses: If you enjoy dairy, feel free to swap goat cheese for crumbled feta, shredded Gruyere, or even a sharp cheddar for different flavor profiles.
    • For Extra Protein: For an added protein boost, you could stir in a few tablespoons of small-curd cottage cheese into the egg mixture. It adds creaminess and a mild flavor without being overpowering.
  • Herbs: Fresh herbs can dramatically change the flavor. Try adding chopped fresh chives, dill, thyme, or parsley to the egg mixture for an aromatic boost.
  • Protein: While this quiche is fantastic as is, you can easily add cooked protein like crumbled sausage (ensure it’s gluten-free if needed), diced ham, or shredded chicken for an even heartier meal.

How to Make Sweet Potato Crust Quiche: A Step-by-Step Guide

Creating this delicious sweet potato crust quiche is a straightforward process, broken down into simple, manageable steps. Follow these instructions, complete with visual cues, for a perfect result every time. For full, detailed instructions and precise measurements, please refer to the recipe card below.

Shredded sweet potato in a towel to squeeze out excess water.
Step one: Prepare the Sweet Potato. Begin by thoroughly shredding your peeled sweet potato. This is crucial for a cohesive crust. Once shredded, use a clean kitchen towel to firmly squeeze out as much excess water as possible. This step is vital for preventing a soggy crust and ensuring it crisps up beautifully.

Step two: Form the Crust. In a large mixing bowl, combine the thoroughly drained shredded sweet potato with an egg, tapioca starch (or arrowroot), avocado oil, and a generous pinch of salt and pepper. Mix everything together until well combined. Then, press this mixture firmly and evenly into your greased baking pan, ensuring it extends up the sides to form a neat crust.

Step three: Pre-bake the Crust. Transfer the pan with the formed sweet potato crust to the preheated oven. Bake for the recommended time until the edges begin to brown and the crust is mostly cooked through. It doesn’t need to be fully crispy at this stage, as it will bake further with the filling.
The vegetables sauted in a pan.
Step four: Sauté the Veggies. While the crust is pre-baking, heat ghee or avocado oil in a separate pan over medium-low heat. Add your chopped leeks, asparagus pieces, diced shallots, and minced garlic. Sauté these vegetables gently until they are softened and just fork-tender, seasoning with salt and pepper to taste. Set them aside to cool slightly.
The egg mixture in a bowl before adding to the quiche.
Step five: Prepare the Egg Mixture. In a large bowl, whisk the eggs until they are light and frothy. Crumble in the soft goat cheese (if using) and add another pinch of salt and pepper. Whisk again to combine. Gently fold the cooled, sautéed leeks, asparagus, shallots, and garlic into the egg and cheese mixture, ensuring an even distribution.
The egg mixture poured on top of the baked crust.
Step six: Combine and Bake. Carefully pour the prepared egg and vegetable filling over the pre-baked sweet potato crust in the pan. Gently spread the filling if needed to ensure it’s level. Return the quiche to the oven to bake until the egg filling is completely set and firm to the touch, and the top is lightly golden.

Step seven: Cool and Rest. Once baked, remove the quiche from the oven. It’s important to let it cool and rest for about 8-10 minutes before attempting to slice it. This allows the quiche to set further, preventing it from crumbling when cut and ensuring clean, beautiful slices.

Step eight: Slice and Enjoy! After resting, slice the quiche into wedges. Garnish with fresh green onion for an extra touch of flavor and color, and serve immediately. Enjoy this wholesome, flavorful, and beautifully presented sweet potato crust quiche!

Expert Tips & Tricks from Michelle 🤓

To ensure your sweet potato crust quiche turns out perfectly every time, keep these professional insights in mind:

  • The Color and Material of Your Pan Matters: Baking pans conduct heat differently based on their color and material, which can significantly impact baking time.
    • If you opt for a light-colored or white enamel cast iron pan, it will reflect heat more, meaning your quiche might require a slightly longer baking time to achieve that golden crust and fully set filling. Keep an eye on it and add a few extra minutes as needed.
    • Conversely, if you’re using a darker, uncoated black cast iron pan, it will absorb and retain heat more efficiently. This often means your quiche will bake faster, potentially requiring less baking time than specified in the recipe. Always adjust accordingly to prevent over-baking.
  • Baking Dish Alternatives: While a 10-inch cast-iron frying pan provides excellent heat distribution and a rustic presentation, you can absolutely use a round baking dish of a similar size (such as a ceramic or glass pie dish). The sweet potato crust will adhere just as well, and the results will be equally delicious. Just be mindful of the pan color/material tip mentioned above for slight adjustments in baking time.
  • Don’t Skip Squeezing the Sweet Potatoes: This is arguably the most crucial step for the crust. Excess moisture in the sweet potatoes will lead to a soggy crust that falls apart. Invest the time and effort to wring out as much liquid as possible with a clean kitchen towel.
  • Preheating is Key: Ensure your oven is fully preheated before putting in the crust or the quiche. Consistent oven temperature is vital for proper baking and setting.
  • Let it Cool: Resist the urge to slice into your quiche immediately after removing it from the oven. The resting period allows the eggs to set completely, resulting in cleaner slices and a better overall texture.

Ingredients

For the crust

  • 14 oz sweet potato, peeled and shredded
  • 1 large egg
  • 1 tbsp arrowroot starch (buy here)
  • 1 ½ tbsp avocado oil (buy here)
  • Salt & pepper to taste

For the quiche filling

  • 1 tbsp ghee (clarified butter, sub avocado oil) (buy here)
  • 1 leek, white part chopped into thin rounds
  • 4 stalks asparagus, chopped into ½” pieces
  • 1 shallot, diced
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 6 large eggs
  • 2 oz soft goat cheese, crumbled (optional, omit for dairy-free)
  • 2 tbsp green onion, chopped (for garnish)

Equipment

  • Food Processor (with shredder attachment, or a box grater)
  • 10-inch enamel cast iron frying pan or round baking dish
  • Large mixing bowls
  • Clean kitchen towel
  • Frying pan (for sautéing vegetables)
  • Whisk

Instructions

  1. Preheat your oven to 400°F (200°C). Generously grease a 10-inch enamel cast iron frying pan or a round baking dish with oil. This ensures the crust doesn’t stick.
  2. Shred the peeled sweet potato thoroughly. For best results, use the shredder attachment on your food processor, or a box grater with the largest holes. Place the shredded sweet potato in a clean dish towel and firmly squeeze out as much excess water as possible. This step is crucial for a crisp crust.
  3. In a large bowl, combine the drained shredded sweet potato with the egg, arrowroot starch, avocado oil, and season with salt and pepper. Mix well until all ingredients are fully incorporated. Press this sweet potato mixture firmly and evenly into the prepared pan, making sure to extend it up the sides to form a crust and pressing down firmly on the bottom.
  4. Transfer the pan to the preheated oven and bake the sweet potato crust for 23-25 minutes, or until the edges start to brown and the crust is mostly cooked. The bottom might still be slightly softer, but it should not be raw. Remove from the oven and set aside to cool slightly while you prepare the filling.
  5. While the crust is baking, heat the ghee (or avocado oil) in a separate pan over medium-low heat. Add the chopped leeks, asparagus pieces, diced shallots, and minced garlic. Sauté for about 5 minutes, or until the vegetables have softened and are fork-tender. Season with salt and pepper, then remove from heat and let cool for a few minutes.
  6. In another large bowl, crack the 6 eggs. Sprinkle in the crumbled soft goat cheese (if using) and another pinch of salt and pepper. Whisk vigorously until the eggs are well combined and slightly frothy. Gently stir in the cooled sautéed leeks, asparagus, shallots, and garlic into the egg mixture.
  7. Carefully pour the egg and vegetable mixture into the pre-baked sweet potato crust in the pan. Gently spread the filling evenly. Return the quiche to the oven and bake for an additional 20-24 minutes, or until the egg filling is firm and set. A knife inserted into the center should come out clean.
  8. Once baked, remove the quiche from the oven and allow it to cool for about 8-10 minutes before slicing. This resting period allows the quiche to set properly, ensuring clean, intact slices. Garnish with chopped green onion before serving and enjoy!

Notes

  • Pan Color Matters: A light-colored or white enamel cast iron pan may require slightly more baking time. A darker, uncoated black cast iron pan will bake faster and may need less time. Adjust accordingly.
  • Baking Dish: A regular round baking dish of similar size can be used in place of a cast-iron pan.
  • Dairy-Free: Omit the goat cheese for a completely dairy-free version. The quiche will still be delicious!
  • Veggie Swaps: Feel free to experiment with other vegetables like spinach, zucchini, or sun-dried tomatoes.
