For the meatballs

  1. Preheat the oven to 375 F (190°C) and line a baking sheet with parchment paper. Set aside.
  2. Using a medium pan, heat 1 tbsp of olive oil over medium-low heat. Saute the diced onion for 3-4 minutes or until lightly translucent. Add the 3 cloves minced garlic and saute for another 2 minutes. Set aside and allow to cool slightly.
  3. Add the ground turkey, 2 tbsp chopped fresh basil, coconut flour, 2 tsp nutritional yeast, ½ tsp sea salt, and ¼ tsp black pepper (omit for AIP), along with the remainder of the olive oil and onion and garlic mixture to a large mixing bowl. Mix well to combine, but do not overmix.
  4. Form the mixture into meatballs of uniform size and place them on the prepared baking sheet.
  5. Bake in the preheated oven for 30-35 minutes, flipping halfway through. The internal temperature should read 165 F (74°C).
