Day One: A Warm Welcome and Culinary Delights in Miami
My journey to the Fresh Air Retreat began with a flight from Dallas to Miami, landing me at the stunning retreat house in the late afternoon. The tradition of hosting this retreat in a different, exquisite rental home each year truly pays off, and this Miami residence was nothing short of spectacular. With its expansive pool area offering mesmerizing beach views, it felt less like a rental and more like a luxurious resort designed for ultimate relaxation and inspiration.
Our inaugural event was a delightful welcome happy hour, generously sponsored by Flor De Cana, an esteemed producer of sustainable rum. Among the exquisite appetizers served, the pork belly with a delicate rum glaze and a hint of orange zest was an absolute showstopper. The melt-in-your-mouth texture combined with the sweet and savory notes was simply unforgettable; I found myself recounting its deliciousness to my husband, Daniel, later that evening. For dessert, Chef Trimell presented a classic reimagined: perfectly ripened bananas with rum, served over creamy dairy-free ice cream. This rendition elevated a familiar treat into something truly exceptional, far surpassing any other version I had tasted before, showcasing the chef’s refined skill.


A recurring theme throughout this retreat, which I quickly learned to appreciate, was the incredible abundance of delicious food. Despite the generous happy hour spread, we were treated to a full, exquisite dinner later that night. The main course featured succulent chicken skewers, perfectly grilled vegetables, fluffy quinoa, and delicate white fish – a perfectly balanced and deeply satisfying meal that capped off a fantastic first day. It was clear from the start that every culinary detail was meticulously planned to delight and nourish.


Day Two: Professional Growth and Miami’s Culinary Gems
Day two dawned with an invigorating start as we gathered bright and early for a rejuvenating yoga session at the retreat house. Despite a morning downpour, the spacious indoor areas provided a perfect sanctuary for our practice, ensuring we still enjoyed a wonderfully grounding and energizing class that set a positive tone for the day.

We enjoyed a variety of customizable rice bowls featuring Minute Rice, and I was genuinely impressed. Our initial stop was The Social Club on Collins Avenue in Miami, where I savored a beautifully crafted mocktail, enjoying the vibrant atmosphere. From there, we took a short stroll to Sérêvène, a culinary gem where the Greater Miami Convention and Visitors Bureau generously hosted us for what was undeniably one of the most exquisite meals of my entire life. The dinner comprised an astonishing nine courses, each thoughtfully prepared to accommodate various dietary needs, including my own allergies and intolerances. I was able to enjoy almost every dish, a rare and delightful experience when dining out. My personal highlight was a truly innovative beet noodle dish, delicately balanced with fresh fruit and aromatic herbs – its subtlety and perfect execution left a lasting impression, showcasing a mastery of flavor and presentation.


Day Three: Poolside Learning and Innovative Grilling
Day three commenced with yet another visually stunning and delicious breakfast, masterfully prepared by Chef Trimell. We were treated to “cloud eggs,” a whimsical and light creation made from whipped egg whites baked to airy perfection and then crowned with a vibrant egg yolk. Seriously, how incredibly charming and fun is this dish? It was a delightful way to start a productive day.
Following breakfast, the remainder of the day was spent in a relaxed, yet highly productive, poolside setting. We continued our engaging quick-fire Q&A sessions, delving deeper into various aspects of food blogging, from content strategy to monetization. This informal learning environment was incredibly valuable. We also enjoyed a lively game of Jenga, where each pulled block presented a new question or prompt, encouraging us to share even more personal tips, tricks, and insights about our blogging journeys. The casual atmosphere provided ample opportunities for candid conversations and further strengthening our connections. Of course, I also managed to capture some charming photos of our group enjoying the vibrant Miami sun by the pool!


Our final dinner was hosted by Current, and I must admit, their innovative product truly astonished me. I’m a little embarrassed to confess that traditional grills have always intimidated me somewhat! Perhaps it’s living in Texas, where the heat can be intense, making the thought of all the extra work associated with charcoal or gas grilling less appealing. However, Current presented a game-changing solution: a fully electric grill! Its ease of setup, straightforward cleaning, and effortless cooking experience completely won me over. I had the opportunity to test it out firsthand, and I can confidently say I thoroughly preferred using this electric grill to any traditional model. We concluded the night with another delightful dinner, followed by the quintessential outdoor treat of s’mores around a cozy fire. As I drifted off to sleep that evening, my heart was incredibly full, and my mind was buzzing with countless innovative ideas and actionable strategies to further enhance and improve Unbound Wellness.
