Perfect for busy weeknights or weekend meal prep, these mouthwatering pork carnitas deliver authentic Mexican flavor right to your kitchen. Best of all, this recipe is thoughtfully crafted to be compliant with strict dietary protocols, including Paleo, AIP (Autoimmune Protocol), and Whole30, ensuring a delicious and healthy meal for everyone.

What Exactly Are Carnitas?
Carnitas, meaning “little meats” in Spanish, is a beloved traditional Mexican dish hailing from the state of Michoacán. Traditionally, carnitas are made by simmering pork, often pork shoulder, in its own fat (lard) for several hours until incredibly tender and easily shreddable. The process usually involves slow cooking until the meat is falling-apart tender, followed by a crisping stage, often by frying or broiling, which gives carnitas their signature crispy edges and juicy interior.
This culinary masterpiece is celebrated for its rich, savory flavor profile, often enhanced by citrus, herbs, and warm spices. While traditional recipes can be quite involved, this slow cooker version simplifies the process without compromising on taste or texture. Our recipe makes it incredibly simple to achieve that perfect balance of tender, succulent pork with irresistibly crispy bits, ideal for tacos, burrito bowls, and countless other dishes.
AIP, Paleo, and Whole30 Friendly Carnitas
For those following specific dietary guidelines, finding compliant and flavorful recipes can sometimes be a challenge. This slow cooker carnitas recipe rises to that challenge, carefully designed to fit Paleo, AIP, and Whole30 eating plans. This means it’s naturally grain-free, dairy-free, and refined sugar-free. Crucially for AIP, it’s also free from nightshades (like bell peppers, tomatoes, and common spices such as paprika and chili powder) and black pepper, which are excluded during the elimination phase of the Autoimmune Protocol. Instead, we rely on fresh citrus, fragrant herbs, and a touch of coconut sugar (omitted for Whole30) to build a complex and satisfying flavor profile that everyone can enjoy.
Why the Slow Cooker is Perfect for Carnitas
The slow cooker is an absolute game-changer when it comes to making carnitas. It transforms what can be a time-consuming, labor-intensive dish into a remarkably hands-off experience. By utilizing the low, consistent heat of a slow cooker, the pork shoulder cooks slowly and evenly, breaking down tough connective tissues and rendering the fat over several hours. This results in unbelievably tender meat that practically shreds itself with two forks, infused with all the delicious flavors of the citrus and herbs.
Beyond the tenderization, the slow cooker helps to meld the flavors beautifully. The long cooking time allows the pork to absorb the zesty notes of orange and lime, along with the aromatic garlic, oregano, and cilantro, creating a depth of flavor that’s hard to achieve with quicker cooking methods. It’s the ultimate set-it-and-forget-it solution for busy home cooks who crave authentic, healthy, and incredibly satisfying meals.
Crafting Your Perfect Slow Cooker Carnitas: A Step-by-Step Guide
Making delicious carnitas at home has never been easier. Follow these simple steps to prepare a dish that will become a staple in your meal rotation:
- Prepare the Dry Rub: Begin by combining the coconut sugar (if using), dried cilantro, dried oregano, and salt. If you’re not following AIP, you can also include black pepper here. Mix these spices thoroughly to create a fragrant dry rub. This blend is key to building the initial layer of flavor for your carnitas.
- Season the Pork Shoulder: Take your pork shoulder and liberally rub the spice mixture over all surfaces. Ensure the pork is evenly coated to maximize flavor absorption. Place the seasoned pork shoulder directly into the bottom of your slow cooker.
- Add Citrus, Aromatics, and Herbs: Halve the orange and limes, then generously squeeze their fresh juice over the pork shoulder. The citrus not only adds a bright, tangy flavor but also helps to tenderize the meat. Next, add the chopped onion, minced garlic cloves, and bay leaves to the slow cooker, tucking them around the pork.
- Slow Cook to Perfection: Secure the lid on your slow cooker. Cook the carnitas on the LOW setting for 6-8 hours, or on the HIGH setting for 4-5 hours. The precise cooking time may vary slightly depending on your slow cooker and the size of your pork shoulder. The goal is for the pork to be incredibly tender and easily shredded.
- Shred the Pork: Once the cooking time is complete, carefully remove the bay leaves from the slow cooker. Using two forks, gently shred the pork directly in the slow cooker, allowing it to soak up all the flavorful cooking juices. This step ensures maximum moisture and taste.
- Achieve Crispy Carnitas (Optional, but Highly Recommended!): For that irresistible crispy texture, preheat your oven to broil. Transfer the shredded pork from the slow cooker onto a baking sheet, spreading it out into an even layer. Broil for approximately 5 minutes, or until the edges are golden brown and crispy to your liking. Keep a close eye on it, as broilers can crisp quickly!
- Serve and Enjoy: Your homemade slow cooker carnitas are now ready! Serve them hot, garnished with fresh cilantro and an extra squeeze of lime juice for an added burst of freshness.

Can I Make This Recipe in an Instant Pot?
While the slow cooker yields exceptional results, this recipe is also adaptable for an Instant Pot (pressure cooker) if you’re short on time. To make Instant Pot carnitas, follow the same initial steps for preparing the dry rub and seasoning the pork. Place the seasoned pork, citrus, aromatics, and bay leaves into your Instant Pot. Cook on high pressure for approximately 90 minutes. Allow for a natural pressure release for at least 15-20 minutes before performing a quick release. Once cooked, proceed with shredding and broiling for crispiness, as described in the slow cooker method. The Instant Pot significantly speeds up the cooking time while still delivering fork-tender results.
The Best Cut of Pork for Carnitas
For truly authentic and delicious carnitas, pork shoulder is hands down the best cut to use. Also known as “pork butt” or “Boston butt,” pork shoulder is rich in fat and connective tissue. These elements, when subjected to long, slow cooking, break down beautifully, yielding incredibly tender, juicy meat with a depth of flavor. The fat renders down, contributing to the succulence and traditional taste of carnitas. While leaner cuts can be used, they won’t achieve the same melt-in-your-mouth texture and rich flavor that pork shoulder provides.
Creative Ways to Enjoy Your Carnitas
One of the best things about homemade carnitas is their incredible versatility! Once you have a batch of this flavorful shredded pork, the meal possibilities are endless. Here are some fantastic ideas to inspire your culinary creations:
- Build Epic Burrito Bowls: Forget the takeout! Create your own healthy and satisfying burrito bowls by layering a base of cauliflower rice (for Paleo/AIP/Whole30) or regular rice with a generous scoop of carnitas, your favorite salsa (nightshade-free for AIP), avocado, and fresh cilantro. For extra crunch, add some shredded lettuce or thinly sliced radishes.
- Craft Delicious Nachos: Elevate your nacho game with savory carnitas. Instead of traditional corn chips, try making plantain carnitas nachos for a Paleo/AIP-friendly option. Simply top crispy plantain chips with carnitas, a dairy-free “cheese” sauce or a dollop of guacamole, and other compliant toppings like pickled onions or fresh herbs.
- Hearty Breakfast Hash: Transform your breakfast or brunch with a hearty carnitas hash. Sauté diced sweet potatoes, onions, and your shredded carnitas together until everything is tender and lightly caramelized. Serve with a fried egg (if tolerated on AIP reintroductions) or a side of avocado for a complete meal. This is a fantastic way to use up leftovers!
- Authentic Tacos: The classic choice! Fill warm grain-free tortillas (or lettuce wraps for Whole30/AIP) with a generous serving of carnitas. Top with quick pickled onions for a tangy contrast, fresh cilantro, and a squeeze of lime juice. Simple, yet incredibly satisfying.
- Carnitas Salads: For a lighter option, add carnitas to a vibrant salad. Combine mixed greens with sliced avocado, cucumber, and a healthy vinaigrette. Top with warm carnitas for a protein-packed and flavorful meal.
- Stuffed Sweet Potatoes: Bake a sweet potato until tender, then split it open and fill it with warm carnitas, a dollop of guacamole, and a sprinkle of fresh cilantro for a comforting and nutritious meal.

Key Ingredients for Flavorful Carnitas
Creating truly outstanding carnitas relies on a few core ingredients that work in harmony to develop its signature taste and texture. Each component plays a vital role:
- Pork Shoulder: As discussed, this is the star. Its fat content and connective tissues are essential for achieving that fall-apart tender, juicy texture when slow cooked.
- Orange & Lime: The fresh citrus juice not only brightens the flavor of the pork but also aids in tenderization. The combination of orange and lime adds a complex zest that cuts through the richness of the pork.
- Garlic, Bay Leaves, Cilantro, Salt, and Oregano: These aromatic ingredients form the foundation of the carnitas’ savory depth. Garlic and oregano provide earthy, pungent notes, while cilantro adds a fresh, herbaceous lift. Bay leaves contribute a subtle, peppery aroma, and salt is crucial for seasoning the meat thoroughly.
- Coconut Sugar (Optional): A small amount of coconut sugar can help to slightly caramelize the exterior of the pork during the crisping stage, adding a touch of sweetness and depth, reminiscent of traditional carnitas. Omit for strict Whole30 compliance.
- Black Pepper (Optional): While omitted for AIP, a touch of black pepper adds a classic warmth and subtle spice for those not following the protocol.
