The Essential Ingredients for Your Dairy-Free Masterpiece

Creating this spectacular Blueberry Lavender Cheesecake begins with a thoughtful selection of ingredients, each playing a crucial role in achieving its perfect texture and flavor profile. From the naturally sweet crust to the creamy, aromatic filling and the vibrant topping, every component is chosen for both taste and compatibility with Paleo and AIP guidelines.

For the Simple No-Bake Crust: Nature’s Sweet Foundation

  • Dates: These provide natural sweetness and a sticky texture, acting as the perfect binder for our no-bake crust. When soaked, they become wonderfully pliable, blending smoothly to create a dense, flavorful base.
  • Shredded Coconut: Adds a delicate texture and tropical aroma to the crust, complementing the blueberry and lavender flavors. It also contributes to the crust’s structure.
  • Coconut Oil: Helps solidify the crust when chilled, ensuring it holds its shape beautifully without any baking.

For the Creamy, Dreamy Filling: The Heart of the Cheesecake

  • Coconut Cream: This is the star ingredient for achieving that signature rich and creamy cheesecake consistency. You can either buy pre-made coconut cream or easily obtain it by chilling full-fat coconut milk cans overnight and scooping out the thick cream that separates at the top.
  • Coconut Butter (Coconut Cream Concentrate / Coconut Mana): Adds another layer of richness and helps the filling set firm. Its healthy fats contribute to the overall satiety and luxurious mouthfeel.
  • Maple Syrup: Our chosen natural sweetener for the filling, providing a subtle, earthy sweetness that pairs wonderfully with the other flavors without being overpowering.
  • Vital Proteins Gelatin: The essential ingredient that binds the cheesecake filling, providing structure and stability without the need for dairy or eggs. More on its incredible benefits below!
  • Water: Used to bloom the gelatin, ensuring it dissolves properly and integrates seamlessly into the filling.

For the Vibrant Blueberry Lavender Topping: A Burst of Spring Flavor

While technically optional, this topping elevates the cheesecake to an extraordinary level, infusing it with fresh, seasonal flavors.

  • Fresh Blueberries: Bursting with natural sweetness and antioxidants, blueberries provide the beautiful color and fruity core of the topping.
  • Dried Lavender: Infuses the topping with a delicate, floral aroma and taste that perfectly complements the blueberries and lemon, creating a truly sophisticated flavor experience.
  • Lemon Juice: A splash of lemon juice brightens the flavors of the blueberries and lavender, adding a zesty tang that cuts through the richness of the cheesecake.
  • Vital Proteins Gelatin (for topping): Helps to thicken the blueberry sauce, giving it a glossy, slightly set consistency that beautifully coats the cheesecake.
  • Maple Syrup (for topping): Sweetens the topping to perfection, balancing the tartness of the blueberries and the slight bitterness of the lavender.

The Gut-Healing Power of Vital Proteins Gelatin

Vital Proteins Gelatin is truly a game-changer for this recipe and for anyone navigating egg-free or allergen-friendly baking. Derived from grass-fed beef, this high-quality gelatin is completely flavorless, making it an ideal ingredient to provide structure without altering the taste of your delicious creations. As an egg-free baker, I can attest that it’s an absolute lifesaver, perfectly substituting for eggs in countless recipes and ensuring your desserts hold together beautifully.

Beyond its functional role in the kitchen, Vital Proteins Gelatin offers a long list of remarkable health benefits. It is renowned for its ability to support the health and integrity of the gut lining, which is crucial for overall wellness and often a key focus of the AIP diet. Furthermore, gelatin contributes to the elasticity and firmness of the skin, promoting a youthful glow from within. It also plays a vital role in supporting joint health, aiding in the repair and maintenance of cartilage. Incorporating Vital Proteins collagen and gelatin into my diet has made a noticeable difference in the ongoing health of my gut and overall vitality. It’s an ingredient you can feel good about adding to your desserts.

Essential Cookware for a Seamless Cheesecake Experience

Achieving the perfect no-bake cheesecake is made even easier with the right tools. Here’s what you’ll need:

  • Food Processor: This is your best friend for making both the crust and the creamy filling. It effortlessly blends dates and coconut for the crust and whips the filling ingredients into a smooth, consistent mixture, saving you time and effort.
  • 7-8″ Springform Pan for Round Cheesecake or 8″x8″ Baking Pan for Cheesecake Bars: A springform pan is ideal for creating an authentic, beautifully round cheesecake that can be easily released for serving. However, if you prefer to make convenient cheesecake bars, an 8″x8″ square baking dish works just as well. The choice depends on your desired presentation!

Ingredients

FOR THE CRUST

  • 1 cup shredded coconut
  • 10 dates, pitted (soak in water for 10 minutes if hard)
  • 1 tbsp coconut oil

FOR THE FILLING

  • 1 ½ cup coconut cream
  • 2 tbsp coconut butter, melted
  • 2 tbsp coconut oil, melted
  • ¼ cup maple syrup
  • 1 tbsp Vital Proteins Gelatin
  • ¼ cup water

FOR THE BLUEBERRY LAVENDER TOPPING

  • 4 cups fresh blueberries
  • ¼ cup water
  • 1 tsp Vital Proteins Gelatin
  • 1 tbsp lemon juice
  • 1 tbsp dried lavender
  • 1 tbsp maple syrup

Instructions

FOR THE CRUST

  1. Line the base of a 7-8″ springform pan with parchment paper and set aside. See notes for alternatives if you prefer cheesecake bars.
  2. Using a food processor, blend the pitted dates until they form a sticky paste. Add the shredded coconut and coconut oil, then blend until all ingredients are fully combined and the mixture is cohesive.
  3. Evenly press the crust mixture into the prepared pan, ensuring it forms a firm, flat base. Set aside in the refrigerator to chill while you prepare the filling. Thoroughly clean out the food processor for the next step.

FOR THE FILLING

  1. In the clean food processor, combine the coconut cream, melted coconut butter, melted coconut oil, and maple syrup. Process for 10-15 seconds until the mixture is smooth and well-incorporated. Set aside.
  2. Pour the ¼ cup of water into a small saucepan. Evenly sprinkle the Vital Proteins Gelatin over the water. Allow it to sit undisturbed for 2-3 minutes; this process is called “blooming” and helps the gelatin dissolve without lumps.
  3. Place the saucepan on the stovetop over very low heat. Gently melt the gelatin mixture for 1-2 minutes, stirring continuously with a whisk or a milk frother. Be careful not to let the water bubble or boil, as this can degrade the gelatin. Continue whisking until the gelatin is completely dissolved and the mixture is frothy.
  4. Immediately add the warm gelatin mixture into the food processor with the coconut cream mixture. Blend for another 10-15 seconds to ensure the gelatin is fully incorporated and the filling is perfectly smooth.
  5. Carefully pour the creamy filling over the chilled crust in the pan. Gently tap the pan a few times on the counter to release any air bubbles. Place the cheesecake in the refrigerator to chill and set overnight, or for a minimum of 6-8 hours, until firm.

FOR THE TOPPING

  1. In a small saucepan, combine fresh blueberries, ¼ cup water, lemon juice, dried lavender, and maple syrup (reserving the 1 tsp gelatin for later). Place the saucepan on medium heat and stir gently for 4-5 minutes, allowing the blueberries to soften and release their juices. Do not allow the mixture to boil.
  2. Once the blueberries are soft and the sauce has formed, sprinkle in the remaining 1 tsp of Vital Proteins Gelatin. Stir continuously for another 2-3 minutes until the gelatin is fully dissolved and the sauce begins to thicken slightly. Remove from heat and allow the topping to cool slightly before pouring over the chilled cheesecake.

TO SERVE

  1. Once the cheesecake is thoroughly chilled and firm, carefully remove it from the springform pan. Run a thin butter knife along the edge of the pan to gently separate the cheesecake from the sides. Release the springform and transfer the cheesecake to a serving plate.
  2. Spoon the cooled blueberry lavender topping evenly over the surface of the cheesecake. Slice the cheesecake into 12 or more generous slices, garnish with a few fresh blueberries or a sprig of fresh lavender, and prepare to savor this delightful, healthy treat!

Notes

An 8×8″ square baking dish also works if you’d rather make cheesecake bars instead of a round cake. Simply press the crust mixture evenly into the bottom of the square pan, proceed with the filling, and then slice into bars once set.

Why This No-Bake Cheesecake is a Must-Try

This Blueberry Lavender Cheesecake isn’t just another dessert; it’s a testament to how incredible healthy eating can be. The beauty of a no-bake recipe is its sheer simplicity and convenience, making it perfect for those warm spring and summer days when turning on the oven feels like a chore. It’s an elegant solution for last-minute gatherings or when you simply want to enjoy a decadent treat without all the fuss.

The harmonious pairing of sweet, juicy blueberries with fragrant, calming lavender creates a flavor profile that is both sophisticated and refreshing. The hint of lemon adds a bright, zesty counterpoint, ensuring each bite is perfectly balanced. This combination doesn’t just taste good; it evokes the essence of spring and thoughtful celebration, making it an ideal choice for Mother’s Day, bridal showers, or any occasion that calls for something truly special.

Furthermore, the commitment to being Paleo, AIP, and dairy-free means this cheesecake caters to a wide audience, including those with specific dietary needs or sensitivities. It allows everyone to partake in the joy of a rich, creamy dessert without fear of discomfort. The inclusion of gut-healing gelatin from Vital Proteins transforms it from merely a delicious dessert into a supportive, wellness-promoting treat. You’re not just indulging; you’re nourishing your body with every delightful forkful.

Tips for Success and Storage

To ensure your Blueberry Lavender Cheesecake turns out perfectly, here are a few extra tips:

  • Chilling is Key: Patience is essential for no-bake cheesecakes. Allow ample time for the cheesecake to chill and set properly in the refrigerator. An overnight chill is always recommended for the best results, ensuring a firm, sliceable texture.
  • Coconut Cream Prep: If you’re using canned coconut milk to get your cream, make sure the cans are very cold before scooping out the thick cream. Some people find it helpful to chill them upside down. Avoid shaking the cans.
  • Lavender Quality: Use culinary-grade dried lavender for the best flavor. A little goes a long way, so be mindful of the amount to avoid an overpowering floral taste.
  • Garnishing: Enhance the visual appeal by garnishing with extra fresh blueberries and a few small sprigs of fresh lavender before serving. A dusting of powdered maple sugar (if AIP compliant for you) could also add a touch of elegance.
  • Storage: Store any leftover cheesecake slices in an airtight container in the refrigerator for up to 3-4 days. While it’s best enjoyed fresh, it maintains its deliciousness for a few days, making it perfect for meal prepping a healthy dessert.

Embrace the Joy of Healthy Indulgence

This Blueberry Lavender Cheesecake is more than just a recipe; it’s an invitation to experience the joy of healthy indulgence. It demonstrates that you don’t have to sacrifice flavor, texture, or satisfaction when adhering to dietary protocols like Paleo or AIP. With its vibrant flavors, creamy consistency, and added health benefits, this dessert is poised to become a beloved staple in your recipe collection.
