Essential Ingredients for Your Bacon Wrapped Brussels Sprouts

Crafting these delectable bites requires a few key ingredients, each playing a crucial role in the final flavor profile. Opt for fresh, high-quality ingredients for the best outcome.

  • Fresh Brussels Sprouts: For optimal freshness and flavor, purchase whole Brussels sprouts. Look for firm, bright green sprouts without any yellowing or loose outer leaves. Halving them at home ensures they retain their crispness and absorb the glaze perfectly.
  • Quality Bacon: The bacon is a star here, so choose wisely. A standard cut bacon works best as it’s easier to wrap. Avoid overly thick-cut bacon, which might take longer to crisp up, or bacon heavily seasoned with other flavors, as we want our glaze to truly shine. Uncured bacon is also a great option.
  • The Flavorful Glaze: This sticky, savory-sweet concoction is what truly elevates the dish.
    • Maple Syrup: Provides a natural, rich sweetness that caramelizes beautifully.
    • Balsamic Vinegar: Adds a delightful tang and acidity, balancing the sweetness and richness.
    • Coconut Sugar: Contributes another layer of sweet caramelization and a subtle depth of flavor.
    • Coconut Aminos: A fantastic soy-free alternative that brings umami and a savory depth, similar to soy sauce.
    • Garlic Powder: Infuses an aromatic, savory note into the glaze.
    • Black Pepper: A hint of spice to round out the flavors (omit if following an AIP diet).
  • For the Garlic Lemon Aioli (Optional, but Highly Recommended!): A creamy, zesty dip takes these sprouts to the next level.
    • Mayonnaise: The base for a rich and creamy aioli. For an AIP-compliant version, ensure you use an egg-free, AIP-friendly mayonnaise.
    • Salt and Pepper: To season the aioli to your preference.
    • Garlic Powder: For a robust garlic flavor. Fresh minced garlic can also be used for a stronger kick.
    • Lemon Juice: Adds a bright, fresh, and tangy finish to cut through the richness.
  • Fresh Thyme: A sprinkle of fresh thyme at the end adds a wonderful aromatic garnish and an extra layer of herbal flavor that pairs perfectly with both bacon and Brussels sprouts.

How to Master Bacon-Wrapped Brussels Sprouts in the Oven

Follow these simple steps to create perfectly crispy, sweet, and savory bacon-wrapped Brussels sprouts every time.

  1. Preheat and Prepare: Begin by preheating your oven to 400°F (200°C). Line a large baking sheet with parchment paper. This crucial step prevents sticking and makes cleanup a breeze, especially with the sticky glaze.
  2. Craft the Glaze: In a medium bowl, combine the maple syrup, balsamic vinegar, coconut sugar, coconut aminos, garlic powder, and black pepper (if using). Whisk all the ingredients together until thoroughly combined and smooth. Set this delicious glaze aside.
  3. Slice the Bacon: Lay your bacon strips flat on a cutting board. Depending on the size of your Brussels sprouts, slice each strip in half or even into quarters. The goal is to have pieces that are just long enough to comfortably wrap around a Brussels sprout half. If your sprouts are smaller, smaller bacon pieces will ensure a good ratio.
  4. Coat with Glaze: Spoon out about 2 tablespoons of your prepared glaze into a separate small bowl. Use a brush to lightly coat both sides of the sliced bacon with this small amount of glaze. Then, add the halved Brussels sprouts to the bowl with the remaining glaze. Toss them well until each sprout is evenly coated.
  5. Wrap and Secure: Take one half of a glazed Brussels sprout. Tightly wrap a strip of glazed bacon around the sprout. To ensure the bacon stays securely in place during baking, pierce through the bacon and sprout with an oven-safe bamboo toothpick or a small wooden skewer. Arrange the wrapped sprouts in a single layer on your prepared baking sheet, making sure they are not overcrowded. Repeat this process until all your ingredients are used.
  6. Bake to Perfection: Transfer the baking sheet to your preheated oven. Bake for 30-35 minutes, or until the bacon is crispy and caramelized, and the Brussels sprouts are tender-crisp and beautifully browned. Baking time may vary depending on your oven and the thickness of your bacon.
  7. Prepare the Aioli: While the sprouts are baking, prepare your garlic lemon aioli. In a small bowl, combine the mayonnaise, garlic powder, a squeeze of fresh lemon juice (from half a lemon), and a pinch of salt and pepper to taste. Stir until smooth and well blended.
  8. Serve and Enjoy: Once baked, carefully remove the bacon-wrapped Brussels sprouts from the oven. If desired, gently remove the toothpicks before serving. Transfer them to a serving platter and garnish with fresh thyme. Serve immediately with the zesty garlic lemon aioli on the side for dipping.

Expert Tips and Tricks for Perfect Bacon Wrapped Brussels Sprouts

  • The Importance of a Dip: While delicious on their own, serving these sprouts with a dip truly elevates the experience, especially as an appetizer. The creamy, zesty lemon aioli offers a fantastic counterpoint to the rich bacon and sweet glaze. Other great options include honey mustard, sriracha mayo, or even a simple ranch dressing.
  • Customizing Bacon Size: Brussels sprouts vary in size, so don’t be afraid to trim your bacon accordingly. A good rule of thumb is to physically wrap a piece of bacon around a sprout half to judge the ideal length. This ensures a snug wrap and even cooking.
  • Don’t Overcrowd the Pan: For optimal crispiness, arrange the wrapped sprouts in a single layer on the baking sheet, ensuring there’s a little space between each one. Overcrowding can lead to steaming instead of roasting, resulting in soggy bacon and sprouts. If necessary, use two baking sheets.
  • Evenly Sized Sprouts: Try to select Brussels sprouts that are roughly similar in size. This helps ensure they cook evenly, preventing some from being undercooked while others are overcooked.
  • The Right Toothpicks: Always use oven-safe bamboo toothpicks or small wooden skewers. Metal skewers work too, but wooden ones are often easier to handle and remove after baking.
  • Salt to Taste: Bacon is naturally salty, and the coconut aminos in the glaze also contribute salinity. Therefore, the recipe does not call for additional salt for the sprouts themselves. However, feel free to add a pinch if you prefer, or adjust the seasoning of your aioli.

Frequently Asked Questions

Can I Make Bacon Wrapped Brussels Sprouts in an Air Fryer?

Absolutely! The air fryer is an excellent tool for achieving extra crispy bacon. Prepare the Brussels sprouts as directed, wrapping them with bacon and securing with toothpicks. Air fry at 375°F (190°C) for 15-20 minutes, or until the bacon is crispy and the sprouts are tender. Shake the basket halfway through to ensure even cooking.

Can You Make Bacon Wrapped Brussels Sprouts Ahead of Time? How Do You Reheat Them?

These are definitely at their best when served fresh, straight out of the oven, to enjoy their optimal crispness. However, if you’re preparing them for a holiday gathering like Thanksgiving, you can certainly assemble them ahead of time. Store the wrapped, uncooked sprouts on the baking sheet (covered with plastic wrap) in the refrigerator for up to 24 hours. When ready to cook, proceed with baking as directed. For reheating cooked sprouts, place them under the broiler for a few minutes or reheat them in the air fryer until they re-crisp. Avoid reheating in the microwave, as this will make them soggy.

Do I Need Skewers or Toothpicks for Bacon Wrapped Brussels Sprouts?

While not strictly mandatory, it is highly recommended to use toothpicks or mini skewers. These help to keep the bacon securely in place around the Brussels sprouts, preventing it from unraveling in the oven as it cooks and shrinks. This ensures a beautifully wrapped and perfectly cooked bite. You can easily remove them before serving for a more polished presentation, which is often a personal preference.

  • Herbaceous Notes: Experiment with other fresh herbs like rosemary or sage, which also pair wonderfully with bacon and Brussels sprouts.
  • Citrus Twist: For an extra bright flavor, add a bit of orange zest to the glaze or a squeeze of orange juice.
  • Cheese Please: A sprinkle of grated Parmesan cheese over the sprouts during the last 5-10 minutes of baking can add a delightful salty, nutty crust.
  • Nutty Crunch: Toss in some chopped pecans or walnuts with the sprouts before wrapping for an added layer of texture and flavor.
