Why This Carrot Leek Soup Will Become Your New Favorite
This recipe isn’t just about taste; it’s about convenience, nutrition, and ease of digestion. Here’s why we’re confident you’ll fall in love with it:
Effortless Preparation in the Instant Pot
Cooking shouldn’t be complicated, especially on busy weeknights. This soup is a true “set it and forget it” meal thanks to the Instant Pot. Its pressure cooking magic significantly reduces cooking time while locking in nutrients and flavors. Even if you don’t own an Instant Pot, don’t worry! We’ve included simple stovetop instructions in the recipe notes, ensuring everyone can enjoy this delicious creation with minimal fuss.
A Powerhouse of Nutrients
Packed with vibrant vegetables like carrots and leeks, this soup is a fantastic way to boost your daily nutrient intake. Beyond the standard veggie goodness, it features the golden spice turmeric. Known for its powerful anti-inflammatory properties and rich antioxidant content, turmeric not only adds a beautiful color and earthy flavor but also enhances the soup’s overall health benefits. It’s a delicious way to nourish your body from the inside out.
Gentle on Your Digestion
For those managing sensitive stomachs or digestive issues, this blended soup is a dream come true. The process of blending breaks down the fibrous vegetables, making them easier for your body to digest and absorb nutrients. When cooked thoroughly, as this recipe ensures, vegetables become even gentler on the gut. It’s a comforting and therapeutic meal that supports digestive wellness without compromising on flavor.

Mastering the Art of Carrot Leek Turmeric Soup
Crafting this flavorful soup is straightforward. Follow these steps for a perfect batch every time:
- Prepare the Base: Begin by setting your Instant Pot to the sauté function and adding a touch of avocado oil. Sauté the chopped carrots for 3-4 minutes until they start to soften slightly. Next, stir in the sliced leeks and minced garlic, continuing to sauté for another 1-2 minutes until the leeks become tender. This step builds a foundational layer of flavor.
- Infuse with Broth and Spices: Pour in the chicken broth, then add the ground turmeric, sage, and salt. Stir everything thoroughly to ensure the spices are well distributed. Turn off the sauté function.
- Pressure Cook to Perfection: Secure the lid on your Instant Pot. Set it to manual pressure cook for 12 minutes. Once the cooking cycle is complete, carefully perform a quick release of the pressure. Remove the lid and allow the soup to cool for 10-15 minutes before blending.
- Blend Until Smooth: For a silky-smooth consistency, use an immersion blender directly in the pot. Alternatively, carefully transfer the soup in batches to a high-speed blender and blend until creamy.
- Serve Warm and Garnish: Ladle the warm soup into bowls and garnish generously with freshly chopped chives for a touch of freshness and color. Enjoy!

The Star Ingredients of This Hearty Soup
Each ingredient in this soup plays a crucial role in its flavor, texture, and nutritional profile. Let’s delve into what makes them special:
Wholesome Chicken Broth
The foundation of any great soup is a rich, flavorful broth. We highly recommend using homemade chicken bone broth for its superior taste and incredible health benefits, including supporting gut health and providing essential amino acids. However, feel free to use your preferred store-bought chicken broth. For a vegetarian or vegan version, a high-quality vegetable broth works beautifully as a substitute, maintaining the soup’s robust flavor profile.
Sweet and Earthy Carrots
Carrots are not only the namesake of this soup but also a powerhouse of nutrition. Rich in beta-carotene, which converts to Vitamin A in the body, they support eye health, immune function, and skin vitality. Their natural sweetness perfectly balances the savory notes of the leeks and spices, creating a well-rounded flavor that is both comforting and vibrant. Choose firm, brightly colored carrots for the best results.
Underrated and Aromatic Leeks
Leeks are truly an unsung hero of the vegetable world, offering a milder, sweeter, and more sophisticated flavor than onions. They belong to the allium family, bringing a delicate pungency and aromatic depth to the soup. Preparing leeks is simple: just trim off the root end and the tough green tops, then slice the white and light green parts into half-moons. Remember, leeks can hold a lot of dirt between their layers, so wash them thoroughly under running water after slicing. Don’t discard the dark green tops! They can be saved and used to make homemade vegetable or chicken broth, minimizing waste and maximizing flavor.
The Golden Duo: Turmeric and Sage
These two spices are essential to the distinctive character of this soup. Ground turmeric provides a warm, earthy flavor with hints of ginger and pepper, along with its signature vibrant orange color that makes the soup visually appealing. Beyond its culinary uses, turmeric is celebrated for its potent anti-inflammatory and antioxidant properties, largely due to its active compound, curcumin. Sage adds a wonderfully aromatic, slightly peppery, and woodsy note that complements the sweetness of the carrots and the mildness of the leeks, tying all the flavors together in a harmonious blend.

Enhance Your Meal: Serving Suggestions and Variations
Perfect Pairings
- For a Hearty Meal: Top your soup with shredded chicken, crispy bacon bits (ensure AIP/Paleo compliant), or a sprinkle of toasted pumpkin seeds for added protein and crunch.
- Bread Pairing: Serve alongside a slice of gluten-free crusty bread or AIP-friendly crackers for dipping.
- Fresh Garnishes: Beyond chives, consider a swirl of coconut cream for extra richness (if not strictly AIP), or a dash of fresh parsley or cilantro.
Simple Substitutions & Variations
- Creamier Texture: For an even creamier consistency, blend in ¼ cup of full-fat coconut milk after the soup is cooked. (Note: this might alter Whole30 compliance depending on the brand and additives).
- Spice It Up: Add a pinch of cayenne pepper or red pepper flakes if you enjoy a little heat.
- Herb Variations: Experiment with other herbs like thyme or rosemary for a different aromatic profile.
- Root Vegetable Medley: While carrots are key, you can add a small amount of parsnips or sweet potatoes for additional depth and sweetness. Adjust cooking time as needed.
- Vegan Option: Simply swap chicken broth for vegetable broth.
Storing and Freezing Your Soup
- Refrigeration: Leftover carrot leek soup can be stored in an airtight container in the refrigerator for up to 3-4 days. It often tastes even better the next day as the flavors meld.
- Freezing: This soup freezes beautifully! Allow it to cool completely, then transfer to freezer-safe containers or bags. It can be frozen for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave. Add a splash of broth if it seems too thick after thawing.
