For many years, Waco lacked a significant tourist draw for us personally – we weren’t avid football fans, which often defines local interest. However, with the arrival of Magnolia Market, founded by Chip and Joanna Gaines from the immensely popular HGTV show “Fixer Upper,” the city transformed into a vibrant destination. The market itself is an absolute charmer, meticulously curated and exuding a unique blend of rustic elegance and modern farmhouse appeal.

Upon our arrival, I was initially struck by the sheer number of visitors, wondering if the hype surrounding Magnolia Market was truly justified. The crowds were immense, and my skepticism was momentarily piqued. Yet, as I ventured deeper into the market, exploring its unique offerings and soaking in the infectious atmosphere, I quickly understood the widespread appeal. The charm was undeniable, the aesthetic captivating, and the experience wholly immersive. Before I knew it, I had fully embraced the role of a “pose-y tourist,” eager to capture the beauty and unique spirit of the place in every photograph.

While my husband, with his more lenient dietary preferences, gravitated immediately towards the cheesiest, most glutinous treat he could find, I sought out a more health-conscious option. My exploration led me to Luna Juice Bar, a refreshing oasis amidst the bustling market. There, I discovered options that aligned better with my Paleo/AIP needs, a testament to the growing demand for diverse food choices even in popular tourist destinations.

Although I wasn’t in the mood for a juice at that moment, Luna Juice Bar offered another appealing option: a cold brew coffee made with almond milk. As someone quite sensitive to caffeine, I knew I had to be cautious. Indeed, I didn’t get very far into enjoying the drink before its effects became noticeable, prompting me to gracefully pass it off to my husband. Despite my personal caffeine sensitivity, the rich, smooth flavor of the cold brew with almond milk was undeniably delicious and a perfectly refreshing choice on a warm day. It showcased the thoughtfulness of having dairy-free alternatives readily available, a small but significant detail for those adhering to specific dietary protocols.

Picnik Austin: A Paleo/AIP Pilgrim’s Dream

For anyone immersed in the Paleo and AIP lifestyle, a visit to Picnik Austin isn’t just a meal; it feels like a genuine pilgrimage. My husband and I were so thoroughly impressed and satisfied with our initial experience that we ended up visiting Picnik twice during our Austin trip – once for a delectable dinner and then again for an unforgettable breakfast the following day. Our dinner was so exceptionally delicious that we devoured our plates with such speed and enthusiasm that I completely missed the opportunity to capture any photographs, partly due to the restaurant’s ambient lighting and largely due to our eagerness to savor every bite. However, our breakfast experience proved to be equally, if not more, spectacular, allowing for a moment to document the culinary artistry.

Every sip and bite was an absolute dream; I honestly still find myself dreaming about that perfect combination of flavors!
