It’s vibrant, fun, and offers a refreshing alternative to heavier desserts.
  • Enjoy Dessert AND Fresh Fruit: This recipe brilliantly bridges the gap between indulging in baked goods and incorporating wholesome fresh fruit. You get the best of both worlds – the satisfying sweetness of a cookie and the natural vitamins, antioxidants, and fiber from an array of beautiful, seasonal fruits. It’s a smart and delicious way to enjoy your dessert while still feeling good about what you’re eating.
  • Thoughtfully Allergen-Friendly: In today’s world, catering to various dietary needs is more important than ever. This recipe shines by being gluten-free, dairy-free, and AIP (Autoimmune Protocol) compliant. This means it’s free from common allergens like gluten, dairy, nuts, eggs, and refined sugar, making it a safe and delightful option for individuals with sensitivities or those following a restricted diet. You can serve this with confidence, knowing it accommodates many common dietary requirements.
  • Simple & Fun to Make: Despite its impressive appearance, this fruit pizza is surprisingly straightforward to prepare. The steps are easy to follow, and decorating with fruit can be a fun activity, even for kids!
  • Versatile & Customizable: The beauty of a fruit pizza lies in its adaptability. You can swap out fruits based on seasonality, preference, or what you have on hand, ensuring endless delicious variations.

The Magic of Tigernut Flour in AIP Baking

If you’re new to AIP or gluten-free baking, you might be wondering about tigernut flour. Let’s demystify this fantastic ingredient:

Despite its name, tigernuts are not actually nuts. They are small, fibrous tubers (root vegetables) that grow in the ground, similar to potatoes or carrots. This makes tigernut flour an excellent and safe choice for anyone with nut allergies, or those following a nut-free diet, in addition to being gluten-free and grain-free. Its unique composition also makes it perfect for AIP.

Tigernut flour boasts a slightly sweet, earthy, and nutty flavor profile, which adds a wonderful depth to baked goods without needing actual nuts. It’s also incredibly nutritious, packed with fiber (both soluble and insoluble), which can support digestive health. The fiber content can also help create a satisfying texture in baked goods, absorbing moisture and contributing to a tender crumb. It’s a truly versatile flour that provides a lovely taste and texture to this sugar cookie base.

Tapioca Starch: Your Gluten-Free Baking Secret

Another staple in allergy-friendly baking, tapioca starch (also often referred to as tapioca flour), plays a crucial role in achieving the perfect texture in many recipes, including our fruit pizza. Derived from the cassava root, tapioca starch is naturally gluten-free and grain-free.

So, why do I use it so frequently? Tapioca starch acts as an excellent thickening and binding agent, much like cornstarch, but without the potential issues for some people. In this cookie recipe, it contributes to a delightfully chewy interior and a slight crispness on the edges, which is essential for a great sugar cookie. It also helps to bind the dough, preventing it from becoming crumbly, a common challenge in gluten-free baking. Its neutral flavor ensures it doesn’t interfere with the overall taste of the dessert, allowing the sweetness of the cookie and the freshness of the fruit to shine through.

Essential Recipe Ingredients for Your Fruit Pizza

Crafting this allergy-friendly Sugar Cookie Fruit Pizza requires a few key ingredients. Many of these are pantry staples for those following a gluten-free, dairy-free, or AIP lifestyle. Here’s a closer look at what you’ll need to create this masterpiece:

Sugar cookie fruit pizza ingredients displayed in separate bowls for clarity.
  • Tigernut Flour: As discussed, this fantastic tuber-based flour provides a wonderful texture and subtle sweetness to our cookie base, making it suitable for nut-free and AIP diets.
  • Tapioca Starch: Essential for achieving the right chewiness and binding power in the gluten-free cookie dough.
  • Palm Shortening: This solid, dairy-free fat is crucial for creating a rich, tender cookie and a smooth, creamy frosting without using butter or other dairy products. Ensure you use sustainably sourced palm shortening.
  • Canned Coconut Cream: The thick, rich cream from a can of full-fat coconut milk (chilled overnight to separate the cream) forms the luxurious base of our dairy-free frosting. Its natural sweetness and velvety texture are indispensable.
  • Gelatin: Used as a binder in the cookie dough, gelatin helps to give the gluten-free flours structure and prevent crumbling, contributing to a more cohesive and tender cookie.
  • Maple Syrup & Light-Colored Honey: These natural sweeteners are AIP-compliant and provide the perfect amount of sweetness to both the cookie and the frosting.
  • Baking Soda: A leavening agent that helps the cookie rise slightly and achieve a desirable texture.
  • Vanilla Extract: Adds a classic, comforting flavor to the cookie.
  • Mixed Fresh Fruit: This is where you can get creative! I love a mix of berries (strawberries, blueberries), kiwi, and grapes for their vibrant colors and varying textures. Other excellent choices include sliced mango, pineapple chunks, raspberries, or even thinly sliced peaches. Choose fruits that are in season for the best flavor.
  • Lemon Zest: A final touch that brightens all the flavors and adds a beautiful aroma to the finished fruit pizza.

Customization and Ingredient Swaps for Your Fruit Pizza

One of the joys of cooking is the ability to adapt recipes to suit your preferences or dietary needs. While this recipe is designed to be AIP, here are a few ideas for substitutions and modifications:

  • Arrowroot Starch for Tapioca Starch: These two starches are very similar in function and can typically be swapped 1:1 in most recipes. If you only have arrowroot starch on hand, feel free to use it in place of tapioca starch for the cookie base.
  • Store-Bought Frosting Shortcut: If you’re not strictly AIP or are short on time, you can certainly opt for a quality store-bought frosting. Just ensure it meets your dietary requirements (gluten-free, dairy-free). For a healthier pre-made option, I often recommend Simple Mills Organic Vanilla Frosting, which is a great allergen-friendly choice.
  • Fruit Combinations: Don’t limit yourself to the suggested fruits! Feel free to experiment with what’s in season and what you love. Sliced peaches, mandarins, blackberries, or even thin apple slices can be wonderful additions.
  • Sweetener Adjustments: While maple syrup and honey are used here, if you’re not AIP and can tolerate other sweeteners, you could adjust slightly. However, for the best texture and adherence to the protocol, sticking to the recommended sweeteners is advised.

Step-by-Step: How to Make Sugar Cookie Fruit Pizza

Creating this stunning dessert is easier than you think! Follow these simple steps, complete with visual guidance, to bake your perfect fruit pizza. You’ll find full, detailed instructions in the recipe card below.

Dry ingredients for sugar cookie being whisked in a bowl.

Step one: Prepare Dry Ingredients. In a large mixing bowl, combine your tigernut flour, tapioca starch, gelatin, and baking soda. Whisk them together thoroughly until well combined and lump-free. This ensures an even distribution throughout your cookie dough.

Wet ingredients being mixed and then added to dry ingredients to form cookie dough.

Step two: Combine Wet & Dry Ingredients. In a separate bowl, cream together the palm shortening and maple syrup until smooth. Pour this wet mixture into the bowl with your dry ingredients. Add the vanilla extract and stir everything together until a cohesive cookie dough forms. Be patient, as it may take a few minutes to fully come together.

Cookie dough being formed into a perfect circle on a baking sheet.

Step three: Form the Cookie Base. Lightly grease a baking sheet (or line with parchment paper) and then transfer your cookie dough to the center. Using your hands or a rubber spatula, gently press and form the dough into an 8-inch round circle, aiming for a consistent thickness of about 1/4 inch. A uniform thickness ensures even baking.

Step four: Bake the Cookie. Preheat your oven to 350°F (175°C). Once hot, bake the cookie base for approximately 12-13 minutes, or until the edges appear lightly golden brown. Keep a close eye on it to prevent over-baking. Remove from the oven and, crucially, allow it to cool completely on the baking sheet before moving or frosting. This prevents breakage!

Ingredients for dairy-free frosting being added to a bowl: palm shortening, coconut cream, and honey.

Step five: Prepare the Frosting Base. While your cookie is cooling, gather the ingredients for your creamy, dairy-free frosting. In a clean bowl, combine the softened palm shortening, chilled coconut cream (only the thick cream from the top of the can), and light-colored honey.

Frosting ingredients being stirred together until smooth and creamy.

Step six: Create the Frosting. Stir the frosting ingredients together vigorously. You can use a spoon, whisk, or even an electric mixer on low speed. Continue mixing until the ingredients are fully incorporated and a smooth, creamy frosting forms. The consistency should be spreadable but firm enough to hold its shape.

Creamy frosting being spread evenly over the cooled sugar cookie base.

Step seven: Frost the Cookie. Once the cookie base is completely cooled to room temperature, use a spoon or a rubber spatula to carefully spread the prepared frosting evenly over the entire surface of the cookie. Ensure the frosting reaches the edges for a beautiful finish.

Step eight: Decorate with Fruit & Serve. Now for the fun part! Artfully arrange your sliced strawberries, kiwi half-moons, halved grapes, and fresh blueberries on top of the frosting. I love starting with a ring of strawberries, then kiwi, then grapes, and finishing with blueberries in the center for a stunning visual effect. Finally, sprinkle fresh lemon zest over the top for a bright, aromatic finish. Your beautiful fruit pizza is ready to be admired and enjoyed!

Expert Tips & Tricks for a Perfect Fruit Pizza

Achieving a perfect fruit pizza is all about a few key details. Here are some of my top tips and tricks to ensure your dessert turns out beautifully every time:

  • Ensure the Cookie is Completely Cooled: This cannot be stressed enough! If your cookie base is even slightly warm, the frosting will melt and slide right off, creating a messy situation. Patience is key here. Allow the cookie to cool completely to room temperature, ideally for at least an hour, before even thinking about frosting it.
  • Take a Shortcut with Premade Frosting: While our homemade frosting is delicious and AIP-compliant, if you’re short on time or prefer convenience, a good quality store-bought frosting can be a lifesaver. Just be sure to pick one that is gluten-free and dairy-free if those are important to you. As mentioned earlier, Simple Mills Organic Vanilla Frosting is a great option for those seeking healthier, allergen-friendly alternatives.
  • Slice it Very Carefully! Our gluten-free sugar cookie base is designed to have a lovely tender interior with a slight crispness, which gives it a more rustic and homemade feel compared to the super-soft, highly processed cookie pizzas you might find in stores. Because of this texture, it can be a bit more delicate and prone to breaking if not sliced with care. Use a sharp pizza roller and apply gentle, steady pressure as you slice. Go slowly. Even if a piece breaks, rest assured it will still taste absolutely delicious – just embrace the charm of a rustic slice!
  • Chill Your Coconut Cream: For the best, thickest coconut cream, place your can of full-fat coconut milk in the refrigerator overnight. This allows the cream to separate from the liquid, making it easy to scoop out the rich, solid cream for your frosting.
  • Seasonal Fruit Selection: Choose ripe, in-season fruits for the best flavor and vibrant colors. The fresher the fruit, the more delicious your fruit pizza will be!
  • Storage: Store any leftover fruit pizza in an airtight container in the refrigerator for up to 2-3 days. The cookie may soften slightly over time due to the moisture from the fruit, but it will still be enjoyable.

Serving and Storage Suggestions

This Sugar Cookie Fruit Pizza is best enjoyed fresh, ideally within a few hours of assembly, to appreciate the crispness of the cookie and the vibrancy of the fruit. However, if you have leftovers or need to prepare it slightly in advance, here are some tips:

  • Serving: Once decorated, transfer your fruit pizza to a large platter or cutting board. Use a sharp knife or a pizza cutter to slice it into wedges, just like a traditional pizza. Serve immediately and watch it disappear!
  • Advance Preparation: You can bake the sugar cookie base a day in advance and store it in an airtight container at room temperature. The frosting can also be made a day ahead and stored in the refrigerator; just whip it briefly before spreading if it hardens too much. Slice and prepare your fruit just before assembly to keep it fresh and prevent browning.
  • Storage: Any remaining slices should be stored in an airtight container in the refrigerator. While delicious, the fruit’s moisture can start to soften the cookie base over time. It’s generally best within 1-2 days.

Ingredients

For the Cookie Base

  • ¾ cup tapioca starch

  • ½ cup tigernut flour

  • 1 tbsp gelatin

  • ½ tsp baking soda

  • ¼ cup maple syrup

  • ⅓ cup palm shortening

  • ½ tsp vanilla extract

For the Frosting & Topping

  • ⅓ cup palm shortening

  • ¼ cup coconut cream

  • 2 tsp light-colored honey

  • ½ cup strawberries, sliced

  • 2 kiwis, sliced into half moons

  • ¼ cup grapes, sliced in half

  • ¼ cup blueberries

  • 2 tsp lemon zest

Instructions

For the Cookie Base

  1. Preheat the oven to 350 F (175 C) and line a baking sheet with parchment paper. Very lightly grease the parchment paper with coconut oil or another AIP-compliant oil. Set aside.
  2. Using a large mixing bowl, combine the dry ingredients: tapioca starch, tigernut flour, gelatin, and baking soda. Whisk them together until well blended.
  3. In a separate bowl, cream together the palm shortening and maple syrup until smooth. Add this mixture to the dry ingredients, along with the vanilla extract. Stir until all ingredients are thoroughly combined and a cohesive dough is formed.
  4. Transfer the dough to the prepared baking sheet and form it into an 8-inch round crust, about 1/4 inch thick. Ensure the thickness is as even as possible for uniform baking.
  5. Bake in the preheated oven for 12-13 minutes, or until the edges are lightly golden brown.
  6. Remove the cookie from the oven and allow it to cool completely on the baking sheet. It is crucial for the cookie to be fully cooled before proceeding to prevent breakage!

For the Toppings

  1. In a bowl, combine the palm shortening, coconut cream (make sure it’s the solid cream from a chilled can), and honey for the frosting. Mix well until a smooth, creamy frosting forms.
  2. Once the cookie is completely cooled, use a spoon or rubber spatula to carefully spread the frosting evenly over the cookie base.
  3. Arrange the fresh fruit in a decorative circular pattern over the frosting. A popular choice is to start with an outer ring of sliced strawberries, followed by kiwi slices, then halved grapes, and finally a cluster of blueberries in the center. Finish by sprinkling fresh lemon zest over the entire fruit pizza.

To Serve

  1. Use a sharp pizza roller or knife to very carefully slice the cookie into wedges. Go slowly and steadily to avoid breaking the cookie. If any breaking occurs, remember it’s still delicious and adds to its homemade charm! Enjoy your beautiful and tasty fruit pizza!

Notes

  • Premade Frosting Shortcut: If you’re not strictly AIP, you can take a shortcut with store-bought frosting like Simple Mills frosting to save time.
  • Careful Slicing: This cookie base has a slightly crisper texture than traditional soft sugar cookies, so slice it slowly and carefully with a pizza roller to avoid breakage. Even if it breaks, it’s still delicious!
  • Coconut Cream Tip: For the thickest coconut cream for your frosting, chill a can of full-fat coconut milk in the refrigerator overnight. Scoop out only the thick, solid cream that rises to the top, discarding any liquid.
