For many, the mention of Girl Scout cookies evokes a special kind of nostalgia and a craving for those irresistible treats. Each year, millions eagerly await their chance to purchase these iconic cookies, knowing they’re not just buying a sweet snack, but also supporting young entrepreneurs and their troop activities. While the classic flavors like Thin Mints and Samoas remain timeless favorites, the Girl Scouts continually innovate, introducing new varieties that quickly capture hearts and taste buds. In 2022, the Adventurefuls made their debut, instantly becoming a sensation. This delightful new cookie offers a rich, brownie-like base, a luscious caramel filling, and a delicate chocolate drizzle, creating a symphony of flavors and textures in every bite.
However, for those navigating dietary restrictions or seeking healthier alternatives, enjoying these beloved cookies can be a challenge. That’s where this recipe steps in! We’ve crafted a copycat version of the Girl Scout Adventurefuls that not only captures the essence of the original but also caters to a variety of dietary needs. Our homemade Adventurefuls are entirely gluten-free, grain-free, egg-free, paleo-friendly, and can even be adapted for the Autoimmune Protocol (AIP). Now, everyone can savor the magic of these caramel-filled brownie cookies without compromise.

Unveiling the Girl Scout Adventurefuls: A Copycat Creation
The Girl Scout Adventurefuls were introduced to much fanfare, quickly becoming a highly sought-after cookie. They are essentially a brownie-inspired cookie, featuring a delightful chewy texture, a rich caramel center, and a beautiful chocolatey drizzle across the top. Imagine your favorite brownie transformed into a perfectly portioned cookie, elevated by a gooey caramel core – that’s the Adventurefuls experience!
To ensure this copycat recipe truly honored the original, I undertook a crucial taste-testing mission. Since the official Adventurefuls aren’t gluten-free, my husband generously stepped up as the official taster, providing invaluable feedback. His initial report likened them to Thin Mints, but with a luscious caramel twist instead of mint. This insight was crucial for capturing the authentic flavor profile. After numerous trials and adjustments in my kitchen, he declared my recreation even better than the original! This homemade version not only delivers on taste but also offers significant dietary advantages, being gluten-free, grain-free, egg-free, paleo, and easily adaptable for the Autoimmune Protocol (AIP).
Crafting Your Healthy Adventurefuls: The Essential Ingredients
Creating delicious, allergen-friendly cookies starts with selecting the right ingredients. Each component in this recipe plays a vital role in achieving the perfect texture, flavor, and dietary compliance. Here’s a closer look at what you’ll need:
- Tigernut Flour and Arrowroot Starch: The Grain-Free Foundation. These two flours form the base of our chewy, brownie-like cookies. Tigernut flour is an excellent grain-free and nut-free alternative that contributes a slightly sweet, earthy flavor and a wonderfully soft texture. It’s rich in fiber, making these cookies more satisfying. Arrowroot starch, on the other hand, acts as a binding agent and helps create a light, tender crumb. If arrowroot starch isn’t readily available, tapioca starch makes an excellent 1:1 substitute. While I haven’t experimented with other flours in place of tigernut flour for this specific recipe, almond flour would be the closest alternative in terms of texture and moisture, though it would, of course, no longer be nut-free.
- Maple Syrup: Nature’s Sweetener. We use pure maple syrup to sweeten these cookies, offering a natural, unrefined sweetness that complements the rich chocolate and caramel notes beautifully. It also contributes to the desirable chewy texture of the brownie cookie base.
- Cocoa Powder (or Carob Powder for AIP): The Chocolatey Heart. For that classic brownie flavor, unsweetened cocoa powder is essential. If you’re following the Autoimmune Protocol (AIP), cocoa is typically avoided due to its inflammatory potential. In this case, carob powder is a fantastic, naturally sweet, and caffeine-free substitute that still delivers a rich, dark flavor. Ensure you use pure, unsweetened varieties for both.
- Baking Powder: For a Gentle Lift. A touch of baking powder helps these cookies rise slightly, preventing them from becoming too dense. It’s crucial for those on paleo or AIP diets to use a baking powder that is free from cornstarch and aluminum. I highly recommend this paleo-friendly option from Legit Bread Company, or you can easily make your own homemade version.
- Gelatin Powder: The Secret Binder. In egg-free baking, gelatin powder serves as an excellent binder, helping the dough hold together without the need for eggs. It’s important to use gelatin (which sets when cooled) and not collagen (which does not set), as they behave differently in recipes. The gelatin is added dry to the flour mixture.
- Coconut Cream and Honey: The Dreamy Caramel Duo. These two simple ingredients are all you need to create the rich, gooey, and naturally sweetened caramel filling. Coconut cream provides the necessary fat and creamy texture, while honey offers a deep, floral sweetness. This homemade caramel is surprisingly easy to make and tastes infinitely better than many store-bought options, especially for those avoiding refined sugars.
- Dairy-Free Chocolate Chips: The Signature Drizzle. To complete the Adventurefuls experience, a delicate chocolate drizzle is a must. Ensure you select high-quality dairy-free chocolate chips to keep this recipe allergen-friendly. For AIP, you can make your own carob chips or use a store-bought AIP-compliant carob bar melted down.
- Coconut Oil: For Moisture and Melting. Melted coconut oil is used in both the cookie dough for moisture and richness, and with the chocolate chips to create a smooth, easy-to-drizzle topping.
How to Bake Your Own Gluten-Free Adventurefuls: A Step-by-Step Guide
Making these copycat Adventurefuls is a rewarding process, resulting in a batch of healthier, yet equally delicious, cookies. Follow these detailed steps to create your perfect gluten-free, caramel-filled brownie cookies:
- Step 1: Prepare Your Workspace. Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly grease it with a touch of coconut oil. This prevents sticking and ensures your cookies release easily.
- Step 2: Craft the Brownie Cookie Dough. In a large mixing bowl, combine all the dry ingredients for the cookies (tigernut flour, arrowroot starch, cocoa/carob powder, gelatin, baking powder, and a pinch of salt if not in your baking powder). Whisk them thoroughly to ensure they are well combined and there are no clumps. Next, add the melted coconut oil and maple syrup. Mix everything very well, either with a sturdy spoon or a stand mixer, until a cohesive, firm dough forms. It should be pliable but not sticky.

- Step 3: Scoop and Shape the Cookies. Using a small cookie scoop (like this one, about 1.5 tablespoons capacity), scoop out uniform portions of dough and place them onto your prepared baking sheet. Aim for 9-10 cookies, spaced evenly. Once scooped, gently use your hand or the back of a spoon to lightly press each cookie flat into a disc shape. This helps them bake evenly and provides a good base for the caramel.
- Step 4: Bake to Perfection. Transfer the baking sheet to your preheated oven and bake for 11-12 minutes. The cookies should be set and baked through, but still soft and slightly chewy. Avoid overbaking, as this can make them dry.
- Step 5: Create the Caramel Indent. This step is crucial for holding the delicious caramel filling! Immediately after removing the cookies from the oven, while they are still warm and soft, use a tablespoon measure or the back of a round spoon to gently press an indent into the center of each cookie. Be careful not to press all the way through. Once indented, very carefully transfer the cookies to a wire cooling rack to cool completely.

- Step 6: Prepare the Honey Caramel. While the cookies are cooling, it’s time to make the luscious caramel. In a small saucepot, combine the coconut cream, honey, and a pinch of salt. Place the pot over medium-low heat and stir continuously as the ingredients melt and combine. Once simmering, allow the mixture to cook for about 10 minutes, stirring frequently to prevent burning, until it thickens into a rich, gooey caramel. The caramel should coat the back of a spoon.
- Step 7: Fill the Cookies with Caramel. Once the caramel is ready and slightly cooled (but still pourable), use a spoon to carefully fill the indentations in your cooled brownie cookies. Fill each cookie generously. To set the caramel, transfer the filled cookies to the refrigerator for about 20 minutes or to the freezer for 10 minutes. This ensures the caramel firms up and stays in place.

- Step 8: The Grand Finale – Chocolate Drizzle. While the caramel is setting, prepare your chocolate drizzle. In a small microwave-safe bowl or a double boiler, combine the dairy-free chocolate chips (or carob chips for AIP) and the remaining coconut oil. Gently melt the mixture, stirring until it is completely smooth and liquid. Remove the cookies from the fridge or freezer. Using a spoon or a piping bag with a very small opening, drizzle the melted chocolate mixture artfully over the top of each cookie.
- Step 9: Final Set and Serve. For the chocolate drizzle to harden, transfer the cookies back to the refrigerator for another 10 minutes. Once the chocolate is set, your homemade Adventurefuls are ready to be enjoyed!
Can you use a premade caramel instead of homemade caramel?
Absolutely! If you have a trusted store-bought caramel sauce that aligns with your dietary needs and preferences, you can certainly use it as a shortcut. However, I highly recommend trying the homemade caramel in this recipe. It’s incredibly easy to make, uses only a few natural ingredients, and the fresh, rich flavor truly elevates these cookies. Plus, making it yourself ensures it’s free from any unwanted additives or refined sugars.
Can you skip the chocolate drizzle?
Yes, you can! While the chocolate drizzle adds a lovely touch of visual appeal and an extra layer of chocolatey goodness, these cookies are exceptionally delicious even without it. The brownie base and caramel filling provide plenty of flavor on their own, making them satisfyingly chocolatey either way. If you’re short on time or prefer a less sweet cookie, feel free to omit this step.
How do you store these cookies?
To maintain the perfect texture of both the cookies and the caramel, it’s best to store them in an airtight container in the refrigerator. They will stay fresh and delicious for several days. Chilling them also ensures the caramel remains firm and gooey, preventing it from becoming too soft. They are just as delightful when served chilled as they are fresh from the counter!

Tips for Success and Customization
- Dough Consistency: If your cookie dough feels too crumbly, add an extra teaspoon of melted coconut oil at a time until it comes together. If it’s too sticky, you can chill it for 15-20 minutes, or add a tiny bit more tigernut flour.
- Perfect Indents: Make the indents while the cookies are still warm and pliable. If they cool too much, they might crack. Gently twist the tablespoon measure as you press down for a clean indentation.
- Caramel Thickness: The caramel should be thick enough to spoon but still pourable. If it’s too thin after 10 minutes, continue simmering for a few more minutes, stirring constantly. If it accidentally becomes too thick, you can add a tiny bit more coconut cream (½ tsp at a time) and warm it gently to reach the right consistency.
- Chocolate Melting: When melting chocolate, do it slowly to avoid seizing. A double boiler method (a bowl over a pot of simmering water) is ideal for gentle, even melting. If using a microwave, heat in 15-20 second intervals, stirring well after each, until smooth.
- Serving Variations: While delicious on their own, these cookies are fantastic with a cup of tea or coffee, or even crumbled over dairy-free ice cream for a delightful dessert.
