Ingredients:
- 1 can skipjack tuna, drained
- 1 small avocado, mashed
- Salt and pepper to taste
- 1 tsp garlic powder
- 2 tsp lemon juice
- 1 large piece of nori seaweed
- 6 slices of cucumber, julienned
- ¼ cup shredded carrots
- 1 spoonful of pickled red onion
- 1 tbsp green onion, chopped
Instructions:
- Drain the can of tuna thoroughly and transfer it to a mixing bowl.
- Add the mashed avocado, salt, pepper, garlic powder, and lemon juice to the bowl. Mash with a fork until all ingredients are well combined and the mixture is creamy.
- Lay the piece of nori flat on a clean surface. Spread the tuna salad evenly over two-thirds of the nori sheet, leaving a small border (about 1/3 inch) along the top edge for sealing.
- Arrange the chopped green onions, julienned cucumbers, shredded carrots, and pickled red onion over the tuna salad.
- Starting from the bottom edge, carefully roll the nori tightly upwards, tucking in the fillings. Once rolled, moisten the top edge slightly with water to seal it.
