Instructions

- In a medium stainless-steel pot, combine 1/2 cup water and 1 cup honey. Heat over medium-high until the mixture reaches 240°F on a candy thermometer.
- With the mixer running, slowly pour the hot honey syrup into the mixer bowl and increase speed to high. Whip for 7–8 minutes.
- Add the vanilla extract and whip another 2–3 minutes until the mixture is thick and glossy like marshmallow fluff.
