How to make Ginger Fruit Popsicles

Ingredients

  • 1 1/2 cups lemonade (or lemon water for a lower-sugar option)
  • 1/2 cup water
  • 1 thumb-sized piece of fresh ginger, peeled and grated (adjust to taste)
  • 1 kiwi, peeled and sliced
  • 1/2 peach, sliced
  • 1–2 strawberries, sliced

Instructions

  1. Combine the lemonade, water, and grated ginger in a measuring cup or bowl. Whisk until well combined and taste to adjust sweetness or ginger level.
  2. Place 2–3 slices of fruit against the inside wall of each popsicle mold so they will be visible in the finished popsicle.
  3. Pour the ginger-lemon mixture into each mold, leaving a small gap at the top for expansion.
  4. Insert sticks and lids, then freeze overnight or until fully solid.
  5. To unmold, hold the molds under warm running water for a few seconds to loosen the popsicles, then gently pull them free.
