This brownie marshmallow version is especially satisfying: it’s indulgent like a brownie but light and airy like marshmallow — with added protein to keep you full between meals.

How to Make Brownie Marshmallow Protein Bars

- 2 cups almond milk
- ⅓ cup gelatin
- ⅓ cup cane sugar
- 1 tsp vanilla extract
- 5.5 tbsp chocolate dairy-free protein powder
- ¾ cup dairy-free chocolate chips
- 1 tsp coconut oil
Instructions
- Prepare an 8×8″ pan lined with parchment and lightly dusted with arrowroot starch.
- In a medium pot combine almond milk, gelatin, and cane sugar. Let the gelatin bloom for 4–5 minutes.
- Warm on medium-low, whisking 2–3 minutes until the mixture becomes a thick liquid.
- Cool slightly, then whip in a stand mixer on high for 30 seconds. Add vanilla, marshmallow root (optional), and protein powder; whisk on high 2–3 minutes until thick.
- Pour into the prepared pan and chill at least an hour until the marshmallow is soft and springy.
- Remove from pan, dust a knife with arrowroot, and slice into 10 bars. Trim edges for uniformity and place bars on parchment.
- Melt chocolate chips and coconut oil together in short intervals, stirring until smooth.
- Let the chocolate cool slightly, then coat each bar with chocolate. Use a fork to lift and a spoon to drizzle. Chill until the coating sets.
